What's a good fancy sandwich recipe I can feed my company on Saturday?
There will be a total of 5 of us eating. I know there are some great unique sandwiches out there. I just need a little inspiration from the same old same old. Thanks!

I would toast some halves of Italian bread and serve the sandwiches on that. Roast beef and arugula is divine, with some thinly sliced red onions...yummy. Or a great chicken salad on the toasted bread would be great, too...still with some arugula for a little zing! Simple enough to offer a choice, if you want, and much nicer than plain old sandwiches!
how about making a big batch of chicken salad!
then, separate into different bowls
- keep one standard
- add a little curry and some diced water chestnuts to one
- add celery and grapes and cashews, plus a little dry mustard to one
or try different variations- i think this is a good winner, though- lay out other vegetables and cheeses so that people can make their own, and some nice greens for those who want a salad. everyone loves chicken salad, and this will seem VERY fancy without a ton of effort. plus, it can all be done beforehand so you can spend time with your company.
Tangy Pork Sandwiches
INGREDIENTS
1/4 cup and 1 tablespoon butter or margarine
1/4 cup and 1 tablespoon Worcestershire sauce
2 tablespoons and 1-1/2 teaspoons lemon juice
2 tablespoons and 1-1/2 teaspoons sugar
1/4 teaspoon paprika
1/8 teaspoon salt
1/8 teaspoon cayenne pepper
10 ounces thinly sliced fully cooked pork
5 hamburger buns, split
DIRECTIONS
In a saucepan, combine the first seven ingredients. Bring to a boil, stirring frequently. Add the pork; simmer just until heated through, stirring frequently. Divide meat among buns; top each with 1 tablespoon sauce. Serve with the remaining sauce.
Ask them what they want. Can't go wrong that way :)
I know it sounds simple...but do turkey sandwiches on nice rolls. mayo (or cream cheese), lettuce, and the best part.....cranberries or cranberry sauce.
It's weird, I know. But they add a little something to any turkey sandwich.
Or maybe think about having something catered? There are places you can order brown bag catered lunches that are pretty fun. Check your local deli and sandwich shops.
Monte Cristo Sandwich with mango relish or some other type of fruit relish. These sandwiches are made like french toast on the outside (cooked in a pan) . Nice and elegant without too much fuss.
Panini sandwiches are really good, I gave you a link below for some yummy recipes for them. My favorite is spinach and chicken.

Monte Christo Sandwich
8 slices bread (I use challah)
4 teaspoons honey dijon mustard
8 slices thin deli sliced swiss cheese
8 slices thin deli ham
8 slices thin deli sliced turkey (I like smoked)
3 large eggs
2 tablespoons flour
1 tablespoon melted butter
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons milk (low fat to try to keep it low in fat!)
powdered sugar, for dusting
raspberry preserves, for dipping
Heat oven to 425°F.
Lightly butter a baking sheet pan. I use the spray.
Spread 1/2 teaspoon mustard on each slice of bread.
Layer between mustard sides of two slices of bread, 1 slice cheese, 2 slices ham, 2 slices turkey, and another slice of cheese.
Repeat to make four sandwiches. Whisk eggs, flour, butter, salt and pepper in a shallow dish until smooth.
Blend in milk.
DIP both sides of sandwiches into egg mixture until bread is lightly soaked.
Place on baking sheet; drizzle any remaining egg mixture over top of sandwiches.
Bake 8-10 minutes until bottom is golden brown.
Turn with wide spatula and continue baking 8-10 minutes or until second side is golden brown.
Serve warm dusted with powdered sugar and dip or spread raspberry perserves on sandwiches. Garnish with fresh raspberries.
Sloppy Joe? ; ) do little hamburgers. for tomatoes use cherry tomatoes for the buns use tea rolls. its both normal and elegant.
