What's your favorite, fast and easy, dinner recipe?

I need some new ideas for dinner, but I work so fast and easy is a must. Inexpensive would be a plus too! Thanks!


Answers:
Believe it or not, fried rice is our go to meal. It is pretty easy - it only looks hard in writing.

You will need:
A big skillet or frying pan
A bit of butter
Rice
Finely diced onion or green onion
Any other veggies you like
A container of chicken, beef, or veggie broth
Left-over meat if you have any - if not, no biggie.

Heat the skillet and melt about 2 tablespoons of butter in the bottom. Add the rice to the butter and toast the rice a bit. The rice will get alittle darker and this step will give the rice a nutty flavor. Once the rice starts to look a bit glossy, add the onion and other veggies and let them get a bit of color on them.

Once you have everything hot in the pan, add about half of the broth to the pan with the rice and veggies. Cook until the broth is almost gone and add more broth. Keep adding alittle broth at a time until the rice is cooked. Add in any leftover, cooked meat that you have on hand and allow the meat to get hot with the rice and veggies. Once the rice is done and the broth has cooked down, you are ready to eat.

The key to this is to add veggies and seasonings your family likes - if you all love garlic, go crazy with it. Have a couple of pieces of chicken from KFC left over? There is your meat. This is a great way to use leftovers and to make a meal when you don't have much on hand. We eat this alot.

Everybody is gonna say ewww but when I am in a hurry I just grab a box of hamburger helper out of the pantry. I might add some veggies on the side but I definitely add my own seasoning.

Tacos is my favorite fast & easy meal. Get marinated carne asada steak, grill it and heat up some tortillas. Top with fresh cilantro and cheese and you've got yourself a meal. That's what I'm fixing for dinner tonight. Yum.

I fry up some fajita meat and veggies. It's quick to reheat and place on warm tortillas.

Baked Rotisserie Chicken

Easy to make, with oil, honey, lime juice, paprika, and salt, along with boneless chicken breast halves.

INGREDIENTS:
1/4 cup canola or other vegetable oil
1 tablespoon honey
1 tablespoon lime juice
1/4 teaspoon paprika
seasoned salt
4 chicken breast halves, with skin
PREPARATION:
Mix all ingredients well in saucepan and heat until honey is runny. Arrange 4 chicken breast halves, skin-side-up in a square baking dish or pan which has been oiled or sprayed with cooking spray. Bake uncovered at 400° for about 35 to 40 minutes, basting chicken frequently until browned.

Remove from oven and immediately seal baking dish in foil; let stand for 15 to 20 minutes before serving.
Serves 4.

make pasta and toss it in italian dressing add a lil chopped chicken and mix with diced pepers and it only takes 30 mins unless u bye chiken from the store then its like 15 minz and it seves a lotand its only like 20-30 bucks!!

I use Ramen noodles cook and drain then add an egg and cook the egg then add the packet of seasoning It sounds really bad but my ma made me try it I love it with saltines.....

Broiled pork chops, StoveTop Pork flavored stuffing, and canned green beans........convenient and fast. (but maybe not the most healthy!)

Hot turkey sandwich with stuffing and veggie --!/2 lb turkey lunch meat , can gravy, can veggie, box of stuffing mix Fry the turkey lightly in fry pan with butter, add gravy

Warm some good quality whole tortillas in a dry pan. Cut them into wedges, pile on a plate. Heat whatever you've got -- left over chicken strips, hamburger, beans, veggies, tofu - and pour over the chips. Top with a pile of shredded lettuce, cucumber, sliced avocado, olives and homemade salsa made by chopping tomatoes with cilantro and a bit of pepper. Sprinkle with sharp cheese if you have any handy. Sometimes a bit of ranch dressing or hot sauce is a good addition. Works every time.

10 Minut Taco Salad
Ingredients
1 package Fresh Ground Chicken / Ground Turkey
1 envelope (1.25 ounces) taco seasoning mix
3/4 cup water
4 prepackaged tortilla bowls*
1 can (16 ounces) fat-free refried beans
1 package (12 ounces) mixed salad greens (about 8 cups)
2 green onions, chopped
2 small tomatoes, chopped
1 can (2.25 ounces) sliced ripe olives, drained
1 cup reduced-fat shredded cheddar cheese
Bottled salsa for garnish (optional)
Reduced fat sour cream for garnish (optional)



Instructions
Preheat oven to 350° F. In a large nonstick skillet over medium heat, cook ground chicken 8 to 10 minutes, or until meat is no longer pink, breaking up meat into crumbles. Stir in taco seasoning mix and water. Cook, stirring occasionally until most of liquid is absorbed. Drain.
Meanwhile, bake tortilla bowls for 3 to 5 minutes until golden. Warm refried beans in microwave or heat on stove until heated through.
In a large bowl, combine salad greens, green onions, tomatoes and olives.
Spoon refried beans then salad greens evenly into tortilla bowls. Top with cooked chicken mixture and cheese. Serve with salsa and sour cream, if desired.


Note
Prepackaged tortilla bowls can be found in the Mexican foods section of the grocery store.

Shepard's pie ; all you need is ground beef,cheddar cheese,onion or onion powder which ever you prefer and instant potatoes .Brown 2lbs. beef with1 large onion ,make up three cups of instant potatoes ,pour ground beef into a casserole dish sprinkle with cheese cover with potatoes then sprinkle potatoes with cheese then bake on 350 for 20 minutes . Its cheep its quick and it's good.

Boursin-Pancetta-Chicken skewers! Simply get a package of chicken breast or cutlets, and if you have time, soak them for 30 minutes in a can of beer mixed with a little orange juice. If not that's okay, just go ahead and smear each piece with Boursin cheese then lightly wrap in Pancetta (Italian bacon) and stick 'em on wooden skewers. It takes about 25-30 minutes to cook these babies at 375 degrees, but they look and taste gourmet and can be served with simple macaroni & cheese!

Get deli sliced turkey, a jar of turkey gravy, boil up some egg noodles, and zap some mixed veggies in the microwave.

Chop up the turkey, add it along with the veggies and gravy to the egg noodles, pour into a casserole & top with some buttered bread crumbs and parmesan cheese. Bake until golden & bubbly.

Balsamic & Herb Chicken


Ingredients
6 boneless, skinless chicken breasts
Salt and pepper to taste
1 - 2 Tbsp. Spinach & Herb Dip Mix
1 cup flour
4 Tbsp. Balsamic & Basil Dipping Oil
1 1/2 cups chicken broth
1 tsp. cornstarch
1 Tbsp. water

Directions
Sprinkle chicken with salt, pepper and Spinach & Herb Dip Mix. Dredge chicken in flour. Put Balsamic & Basil Dipping Oil in large frying pan and warm on medium heat. Add chicken; sauté 5-7 minutes until golden brown. Remove chicken to platter and whisk chicken stock into pan. Return chicken to pan; reduce heat to low and simmer 10-20 minutes (depending on thickness of chicken) until juices run clear when chicken is pierced with a fork. Transfer chicken to a warm platter. Combine cornstarch and water, whisk into simmering broth; stir and cook on medium until thickened. Makes 6 servings.

I like to make a mixture of alfredo sauce (your favorite kind but I like alfredo sauce with roasted garlic), carrots, peas, celery, and chicken. It's pretty quick to make and very nutritious because of the veggies. Originally I put it over pasta but it also tastes really great as a pot pie. You can buy refrigerated pie crusts at the grocery store. If you make enough you can make the pasta dish first; and then make the pot pie another day! I love this dish!
