Butter vs. Olive Oil?!

Butter vs. Olive Oil?

I am relatively inexperienced as a chef. Can anyone list the Pros and Cons of cooking with butter, vs. cooking with olive oil? When do I use each substance? Thank you so much!

This is a hard one, and I live to cook.....I use both. I don't really have pros and cons to using either one. I can't cook with out either one. For example when sauteing veggies I use the olive oil to sautee the garlic and onions and I finish it off at the end with a little slice of butter. I creates a nice saucy finish with a little extra flavor. using butter for your base to saute anything can burn faster than using an oil. Of course olive oil is a lot healthier for you but you use the butter in moderation.

Another example: When I make Spanish rice I use olive oil when I make rice pilaf I use butter.

You can use olive oil when you are cooking in a pan..
Butter is used when making cakes & cookies..

use butter with pastry like foods and oilve oil with grill type food.

Butter tastes great. It burns easily and has high cholesterol. Olive oil is good for your heart and has a higher burn temp.

As a chef, I like to use olive oil and butter together. The olive oil raises the burning temperature of the butter, and the butter adds great flavor!

I substitute olive oil for butter in just about everything I cook (not to be confused with baking). I even spread olive oil on toast with a sprinkle of parmesan for breakfast!

The fat in olive oil is much better for you than the fat in butter. Olive oil has a higher smoking point. Butter will burn alot faster than olive oil.

Olive oil can almost replace butter... alomost... you need butter to make a buttercream frosting or pie crust.

Butter has a lot of saturated fat , olive oil is healthier. So when I can, I prefer to use olive oil. But if I have to choose between hard margarine or butter I use butter.

if making pastry or baking use butter unless the recipe says oil, as the texture of butter will be what is called for. For frying it depends on what you are cooking; olive oil has a very delicate flavour and should be used for light and delicate things, butter is more robust. Stews, curries, casseroles etc use butter; fish, stir fry's and mediterranian dishes use olive oil.

Olive oil is better for your health ans should always be used in place of vegatale oil.

Butter in baking.

Well the two are interchangeable for some things and not for others.
I would never use melted butter on a cold salad but I would use olive oil on one.
I would not pour olive oil on my popcorn. LOL

In short if you are frying in it olive oil and butter are interchangeable, but butter will convey flavors that are different from olive oil when frying, also butter will burn more readily then olive oil so it is not recommended for high heat frying. I generally look at what type of cooking I am doing before I choose the fat type to use if fat is called for at all in what I am doing.
I use butter when doing a saute. Usually something with veggies and mushrooms and you would melt the butter over medium heat and add some seasonings to it then add the veggies and do a slow cook with it till the veggies are done, crisp yet tender.
I would use olive oil if I was going to do a stir fry which is done at a high heat and the oil is drizzled into the pan after it has heated up already and then you will add your meat and veggies in the order at which they cook the slowest.
Olive oil is also a great ingredient for salad dressings or anything that calls for oil in a recipe where no cooking is involved as the oil has a light yet pleasant flavor when consumed this way.

You can basically cook everything with olive oil so long as you don't allow it to get smoking hot. Then the positive properties go bad. If you want additional flavor, then you could add butter(the oil helps the butter to melt at higher temperatures). Healthwise, olive oil is always better and butter can only be cooked at lower temperatures as it always burns it the pan gets too tight.

You can use either for baking or cooking. The difference in them is the "fat" and "cholesterol" contents. Although it would seem that baking with butter or margarine would make things moister than baking with olive oil, olive oil would be the healthier choice, especially when it comes to your heart. Also, additionally, you can solidify olive oil in order to make is a spread or solid enough to use to bake with. Olive oil spread is simply olive oil kept at a cold enough temperature that it is able to solidify (become in solid form). Once you solidify the olive oil, you can use it as you would butter or margarine for baking goods, spread it on toast/bread or whatever.
