PASTA SALAD

Antipasta Salad Recipe
Ingredients:
1/2 cup capicalla salami, sliced
1/2 cup pepperoni, sliced
3/4 cup Italian salad dressing
6 cups Lettuce, torn
8 leaves romaine lettuce, torn
3 tomatoes, cut into wedges
1 cucumber, sliced
1 carrot, peeled and sliced
3 oz. black olives, sliced
4 green onions, sliced
4 oz. Feta cheese, crumbled
4 oz. Mozarella cheese, shredded

Directions:
In large bowl, mix all ingredients together except Italian salad dressing. You can store in refrigerator for up to a week. Pour Italian salad dressing over salad just before serving.

Enough salad...try a real meal, preferably some sort of dead cow, cooked to the perfect medium rare over burning coals. Chase it down with a cold beer. A good tater salad or Cole slaw does make a nice addition though.

If the main salad is mostly made with lettuce and other veggies, your side salad could be fruit salad, pasta salad, chicken salad with pecans or walnuts, grapes or raisins or currants.

If it's a bbq chicken salad, or green salad with seared tuna, beef or basically any meat product, than I would keep it simple and complimentary in flavor.

If it has a citrus based dressing, fruit salad.

Caprese salad as the side salad or marinated veggies like asparagus, cucumber, green beans would be a good side salad if you are having a tuna/chicken salad as the main.

That is really impossible to answer, without knowing what the main salad consists of...the side salad ingredients would hinge on that.

A simple Greek salad of tomatoes, olives, feta and fresh basil and a little olive oil.

you could try a few different salads, pasta, garden, greek, chickpea, cous cous, ceasur.... hot, cold, endless possibilities

A chicken salad or tuna salad would go well with a mixed green salad. Or you could use a pasta salad with either one. Just make sure to have some protein in either of the salads.

potato salad. boil some new potatoes, jerseys if in season, leave to cool and mix with mayo or creme fraiche and lots of fresh chopped herbs. season with salt and pepper, or omit the salt and use grated parmesan. you could even add spring onions and crispy bacon pieces for extra flavour.
