Indian Cooking?

I have a book on Bombay cooking but there is no cream/butter sauces in this book. Which regional recipes would include the cream/butter/curry sauces ? IOW, is this type of cooking related to a particular region of India?


Answers:
Depending on what you want to make, there is a lot of difference between North Indian and South Indian foods. South Indian foods tend be spicier; also, they are mostly vegetarian.

I don't think many dishes actually have cream in them other than desserts. Mainly there is a heavy use of yoghurt or butter.

There are a lot pre-prepped foods that you can buy that would normally take a lot of skill or time to make, like paneer cubes (little cheese blocks found in dishes like Mattar or Saag Paneer).

I think what you mean by curry sauces is a dish that involves a sort of gravy. Most meat dishes are like this; they don't requires the addition of water -- the sauce is naturally produced as the meat is cooked. Some dishes like chicken tikka use yoghurt in the sauce.

In general, you can start any dishes by heating up a few tablespoons of oil. To the oil, add onions, ginger and peppers if you want. This forms the basis of many dishes.

After cooking the onions, this is where you decide what you wish to prepare. Most dishes are as follows, you would add whatever vegetable or meat you wish, a dash of curry powder for flavor, some chili powder, perhaps a masala powder (available in stores, it is a blend of spices), salt and pepper.
