I think you're referring to a proof box. It's a box that in which steam is generated to a certain degree to help give the yeast in bread a "kick" to make it rise. The bread/dough rises and once it's at a certain point it can be baked. It's basically a big steam box. They use them in bakeries and pizza shops.

A proofer is a high humidity/ temperature environment that allows dough to ferment or allow the yeast to mature while increasing flavor and volume to the finished product.

Proofing has to do with determining whether the yeast is active, so that you can know the yeast will cause the dough to raise.

Ordinarily, we used to put the yeast in warm water, sometimes with flour and or sugar, to see if the mixture foamed, showing that the yeast was alive and metabolizing the carbohydrates in flour and sugar, and producing carbon dioxide.

But in more recent times, proofing refers to using the microwave to supple the warmth necessary for yeast to flourish and raise the dough.

But as to your question, I have never heard the term oven proofer, and can only surmise that it is container for the dough.

AN oven proofer is for putting bread or donuts in the container for it to rise. You take the bread or donuts out and eiher bake or fry.
