Questions about freezing food?

Can you freeze cooked noodles?

and

Can you freeze a sauce that contains cream cheese? (I know the package says not to freeze the cream cheese itself, but maybe in a sauce it would be okay?)

"We do not recommend freezing cheese that will be used for spreading due to a possible change in its texture; it may become curdled in appearance and have a crumbly texture. Regular brick cream cheese can be frozen up to 2 months for use as an ingredient in recipes."

My mom makes a really great no bake cheese cake. She will freeze about half of it in small portions a day or two after she makes it. It tastes fine, but its texture changes a bit. In a sauce it should be fine, but I wouldn't put it in a spread that you plan on freezing.

For the noodles yes, Lean Cuisine does it all the time. Just make sure it's wrapped well.

The sauce I'm not sure. It's not the cream cheese I'd be worried about, I freeze that stuff all the time. What else is in the sauce? Fresh garlic or herbs? Milk? Cream?

You can definitelyfreeze noodles BUT make sure you heat it up properly before you eat because otherwise it tastes bad. The best way to heat up frozen noodle is add a little water (like about 5/6 table spoon) and heat it up in a pan.

For cream cheese, I dont think you should freeze cream cheese cause they wont unfrease right. For the sauce, there is a good chance of getting some sogginess.

I'm not sure about the noodles, but I think the sauce would be okay. My sister in law freezes cream cheese all the time and uses it for cooking...it tastes just fine to me.

companies have been selling frozen noodles,so I don't know why you can't freeze homemade.

You can freeze cooked noodles and cooked cheese. However, you should never freeze uncooked cheese (and freezing uncooked noodles is just silly - they keep forever at room temperature if properly stored).

I've purchased various frozen products containing pre-cooked noodles that tasted fine, and some that tasted bad. The noodles that tasted good had as little air in the package as possible and had very short expiration dates.

The package of cheese says it should not be frozen because cheese is actually alive. It's a living mold culture. (Doesn't learning about food suck at times?) It's also very tasty. Freezing it will kill it and change its taste. However, cooking also kills the cheese, but in a way that we as the eaters of cheese enjoy. Once the cheese is cooked, it can be frozen if well wrapped and exposed to as little air as possible.

I wouldn't freeze the noodles after they have cooked they will be rubbery and mushy after they thaw. I have frozen cream cheese b4 and had no problems with it.
