Old fashioned Italian cooks? Please help!?

This thinly sliced beef is spiced and then rolled and tied. It is sauted and let to simmer in red sauce. Does anyone have recommendations as to the type of meat and spices?

brasciole?? .....i think the meat is round steak, and the spices are the usual....salt, pepper, parsley and parmesean cheese.

Yes, it's a round steak, London broil etc. (names can vary depending on the butcher/location) or anything you can get the butcher to cut really thin for you. There is no reason to use a more expensive cut of meat as it will be 'fall-apart tender' when done anyway.
