Great recipies!

Chili is pretty basic really. Hamburger, onions, mushrooms, (maybe red pepper) red kidney beans, boston baked beans, diced tomatoes, tomatoe paste, and spices such as chili powder of course together with curry is good. In addition throw in a cinnamon stick and see what that does to the taste. You'd be surprised. You won't taste cinnamon honestly but it tastes great. Chop it as fine as you like. Chunky is good. Simmer for hours in a crock pot. yummy.

I don't know any chili recipes but Hormel has a pretty great one, ask him.

chilli and sundried tomato sauce for pasta:

2 medium brown onions chopped coarsely
2 cloves garlic, quartered (or 2 tsps from a jar)
150g semi dried tomatos in oil (or not in oil if you want lower fat)
70g / 1/4 cup tomato paste
2 fresh red thai chillis, seeded, chopped finely (wear rubber gloves)
500mL / 2 cups beef stock

1. put everything except the stock in a blender and process into a paste
2. cook in large non-stick frypan for 10 minutes, add some oil if you used no-oil tomatos and it is sticking
3. add the stock, stir in and cook lightly simmering for 10 more minutes or until it thickens

this makes enough sauce for 6 pasta serves, you can tell there's chilli in it but it's not so hot that it overpowers the other flavours, I also use it on parmigana and as a layer in a lasagne sometimes

it's really awesome on spinnach and ricotta ravioli, or chicken stuffed with spinnach and ricotta... these flavours seem to be best mates together
