I need some odd, but delicious recipes that have rhubarb in them!


Answers:
rhubarb pie is always a classic YUM. They also have rhubarb salads, using spinach or sometimes other greens that compliment the tart taste of the rhubarb. Happy Cooking!

Rhubarb Betty

1 1/2 lb rhubarb, trimmed and wiped
4oz fresh breadcrumbs
3oz demerara sugar
30z shredded suet
grated rind of 1 lemon or ground ginger or cinnamon
knob butter

Grease an ovenproof dish. Cut the rhubarb into short lengths. Mix together the crumbs, sugar, suet and lemon rind or ginger. Put half the fruit in the dish and cover with half the crumb mixture. Add the remaining fruit and top with the remaining crumbs. Dot with butter and bake in the oven at 350oF for about 45 Min's, or until the fruit is soft and the topping crisp.

Rhubarb Chutney

5lb rhubarb washed and cut into small pieces
1lb onions, skinned and minced.
2lb sugar
2 level tblsp ground ginger
2oz ground mixed spice or 1-2 level tbsps curry powder
2 level tsps salt
1 1/2pt vinegar

Place the rhubarb, onions, sugar, spices, salt and 1/2 pt of the vinegar in a pan and cook slowly until the rhubarb is tender. Add the remaining vinegar and simmer gently until of a thick consistency, with no excess liquid, stir occasionally. Pot and cover. Makes about 6lb.

~~~~~ Mackerel with Rhubarb and Apple Sauce ~~~~~
In Britain, fresh mackerel are in season all year round, but they are at their best between April and June. This recipe has a fruity rhubarb sauce and goes well with potatoes and peas or green beans.

Serves 4
Prep: 30 min / Cook: 25 min

INGREDIENTS

4 fresh mackerel
1 tsp virgin olive oil
Freshly ground black pepper
1 red-skinned apple
Parsley or watercress sprigs for garnish

SAUCE

6oz (175g) young pink rhubarb
6 tbsp apple juice
? oz (15g) butter

PREHEAT the grill to a medium setting. Remove the heads from the fish, cut each fish open along the stomach, remove the entrails and wash thoroughly.

PRESS hard along the length of the fish to loosen and remove the backbone, cutting it at the tail end.

TO make the sauce, cut the rhubarb into 1 ?in (40mm) chunks and place in a saucepan with the apple juice. Simmer for 10 minutes until the mixture is soft, then beat in the butter and keep warm.

MEANWHILE, place the fish on a lightly oiled baking tray and grill them for 5-7 minutes on either side, sprinkling with a little freshly ground black pepper before turning.

POUR the sauce over the mackerel and garnish with the apple slice, parsley or watercress sprigs.

Rhubarb Cherry Jelly

* 6 cups diced rhubarb
* 4 cups white sugar
* 1 (21 ounce) can cherry pie filling
* 1 (6 ounce) package cherry flavored gelatin

DIRECTIONS

1. Place rhubarb in a large bowl. Pour sugar over top and stir to coat. Cover bowl and refrigerate overnight.
2. Place rhubarb mixture in a pot and cook over medium heat until tender, stirring frequently. Stir in pie filling and gelatin, and bring mixture to a boil. Pour into a shallow pan and allow to cool in refrigerator. When jelly is cool, pack into jars or plastic containers. Can be refrigerated or frozen.

Rhubarb Sponge Pie

Ingredients:
1 unbaked pie shell
3 cups rhubarb, chopped
1 cup sugar
1 1/2 tsp. tapioca
2 tsp. grated orange rind
1 egg
1/3 cup sugar
1/2 cup flour
1 tsp. baking powder
1/8 tsp. salt
2 tablespoons orange juice

Mix rhubarb, 1 cup sugar, tapioca and orange rind. Pour into the pie shell. In a small bowl, beat together eggs and sugar for 2 minutes. Add remaining ingredients and beat one more minute. Pour over rhubarb mixture in pie crust. Bake at 375 degrees for 40 minutes or until rhubarb is tender and the batter is cooked.

Fast and Easy Rhubarb Dessert
Ingredients:

Betty Crocker Raspberry Dessert Bar Mix.
2 cups rhubarb (1/2" pieces)
1/3 C sugar

Procedure:

An easy fast dessert is to use Betty Crocker Raspberry Dessert Bar Mix. To the raspberry layer--add 2 cups 1" pieces of rhubarb coated with 1/3 C sugar before adding the crumb topping. P.S. for the summer season blueberries and blackberries work great too.
