Does any one know the correct term for Japanese PAPAGUYA (Spelling?) fish?
Ate this in a restaurant... Waiter said the fish was called Japanese PAPAGUYA (Spelling) but cant find any reference under this name or similar spellings...
Fish was quite large perhaps 30 cm ... and weighed in around 2 kilos
Generally white in colour with multi coloured face / head
Would appreciate anny links you may provide for more information.

Stumped me too , unless it is just a dish they have and not the name of the fish.
This gave me one hell of a run-around until the slap-forehead moment came...
The waiter was trying to tell you in a language he thought you might recognise what the name of the fish was, rather than in japanese (or, of course, the waiter himself was in fact Spanish / Hispanic...
Parrot fish are considered a great delicacy in many parts of the world, including Japan. The one we are dealing with here, based on your description, could be either:
White spotted Parrot fish (Calotomes japonicus)
or
White spotted Parrot fish (Notolabrus gymnogenis)
In Japan, the white spotted parrot fish is known in culinary terms as 'bu-dai', while a generic parrot fish is called 'ishi-dai'
There are a great number of varieties of parrot fish, so the precise species on your plate at the time might well have been yet another kind. But I think we've established the principle behind the riddle?
