CHEESE MUFFINS

1/2 c. 1% fat Cottage cheese
2 tbsp. orange juice
1 tsp. orange rind
3 tbsp. raisins
2 tbsp. chopped walnuts
1 English muffin, split in half

Combine the Cottage cheese, orange juice, rind, raisins and nuts. Put half of the mixture on each half of the toasted muffin.
This recipe makes 2 servings, each containing approximately 164 calories or 1 bread, 1 lean meat and 1/2 fruit exchange.

CHEESE MUFFINS

2 c. grated cheddar cheese
1 c. mayonnaise
1 sm. can chopped black olives
1/4 c. chopped green onions
1 tsp. curry powder, optional
1 tsp. salt
1 pkg. English Muffins

Toast muffins. Spread cheese mixture about 1/4 inch thick. Broil or toaster oven until cheese mixture is melted and lightly browned. Serve hot.

Cheese, Avocado and Bacon Muffins

2 cups flour
4 tsp baking powder
1/2 teaspoon salt
1 Tablespoon sugar
pinch cayenne pepper
1 cup grated cheese
4 spring onions
3 rashers bacon
75grams butter
1egg
1 cup milk
1 Avocado
1 tablespoon lemon juice

Sieve the first 4 ingredients into a large bowl. Add cayenne pepper, cheese and spring onions. Stir to combine.
Chop bacon and cook until crisp.
Melt butter, add egg, milk and beat to combine. Halve avocado and scoop out flesh, cut into small cubes. Sprinkle with lemon juice and add to liquid mixture. Add bacon to liquid and fold both mixtures together. Do not over mix.
Put in muffin trays and bake at 200oC for 10-15 minutes or until they spring back when lightly pressed.

Wisconsin Beer Cheese Muffin
2 cups flour
4 teaspoons baking powder
1 cup sugar
1/2 teaspoon salt
1 teaspoon garlic powder
1 cup beer
1 egg, beaten
1/4 cup oil
2 cups cheddar cheese, shredded

1. Preheat oven to 400F and lightly grease muffin tin.
2. Mix the dry stuff and the wet stuff in different bowls, them mix together along with the cheese.
3. Spoon into prepared muffin tins and bake for 18 to 20 minutes.
4. When done let them sit for 5 minutes before taking them out of the pan.
