Why is it perceived as sophisticated to eat your steak 'rare'?

I like my steak 'well done' but its seen as sophisticated to eat it 'rare' even 'green' (ie its cut off the carcase, waved in front of the cooker and put straight on the plate, still dripping - mmm... yummy). So, what is so good about 'rare' steak?


Answers:
It is because traditionally the poor classes could not afford expensive cuts of meat and were forced to by cheaper ground beef that came from less choice cuts of the animal. Because the meat was of inferior quality, it had to be cooked longer in order to be somewhat edible. High quality cuts do not need to be cooked as long but are more expensive and used to be harder to get and keep refrigerated so only the upper class more sophisticated people tended to eat rare steaks.

I don't understand it either. I like all the red out of mine, not like completely hard and tough, but just so it's not dripping. We had steak last week on the grill and it was still dripping. I couldn't eat any. Two days later I cooked the leftovers more and put a bbq sauce on it--yummy.

Yuck no way would i eat it like that blood dripping all over the plate, i like mine cooked till it's dead

Firstly it's Blue, not Green. Green steak is not going to do you any good (especially if it's furry)
Rare steak is not a sophisticated thing. It's just the fact that if you cremate a steak, you loose almost all of the flavour and tenderness. Well done steak is like trying to eat a piece of leather. (Also, if you ask for well done steak in a restaurant you are likely to get ther piece thats been sat under the grill all day. bleuch!)

Yuck - I dislike any meat that is not thoroughly cooked through.

Right, well, I don't know about the "sophisticated" part, but I enjoy a medium-rare sirloin, or t-bone or filet steak, for the flavor. When they're cooked through (gray or whatever) it's just tough and flavorless, leather-like. Needs some juice to be tasty!

Never heard that it was seen as sophisticated, lol but I eat mine med rare*pink*. It makes it tough and dry when you cook it too long.

i dont like rare or BLUE not green staeak i have mine medium to well no red just pinky in places and very tender nice well done is like eating leather if get a bad peice that takes forever to chew.i could not sit next to anybody who has the blood dripping out aww my b/f likes his medium to rare thats bad enough i make him eat it away from me.haha

i once had rare steak, f*cking horrible! i felt sick!!! i like my steak medium to well done!!! nice and yummy! mmmm! of course it needs all the other stuff like chips, fried onions, fried mushrooms, onion rings and salad!!! mmmmmmmmm yummy!

I personally dont see a point in ordering a peice of steak and then ruining it by having it well done. Especially if it a nice tender fillet or a flavoursome sirloin.

If you ask a chef to cook a fillet steak well done, he will frown at you in the least...if you asked Gordan Ramsey he will probably bite your head off. If a peice of steak is over cooked it loses all its flavour, juices and tenderness. It has nothing to do with sophistication, its just seen to ruin a nice piece of meat.

Obviously some tastes differ, so it is not wrong to eat a well done steak it if thats how you like it...but have you ever tried it slightly more rare..maybe medium rare? If its because of the blood...if the steak is good and has been hung correctly then there should not be a load of blood billowing out of it.

If its because it reminds you too much that you are actually eating an animal...whats the difference. You are eating an animal anyway, you might as well enjoy it.

Thats just my opinion anyway.

its nothing to do with sophistication if meat is over cooked its pointless eating all goodness is gone plus its a lot easier to chew when its medium rare or rare and probably easier to digest most people cook chicken the wrong way up thats why they end up with dry chewy chicken or turky

The most "sophisticated" people I know all eat it well done. You can hardly bite into it and absolutely need the wine to wash it down.

The two biggest idiots I know prefer it rare.

Obviously, I don't think it has anything to do with sophistication.

Personally, I prefer mine medium or medium rare, depending on the cut. If it's a fatty cut I take it medium because it has juice in there and doesn't need as much help staying moist, but a lean cut dries out so it's better med-rare.

Well first off it is amatter of taste, i before my stakes waved in front of a light bulb for about 5 secs, but thats me. However the real fun is when you work in a kitchen and you get some jacka#$ who orders a 16 oz filet well done, with no butterfly. It only takes about 45 minutes to destroy that piece of meat, but the people that really suffer are the other people at your table who pronaly ordered some sort of fish or chicken that takes 4 minutes to prepare. And while i am at it theres nothing gross or un healthy about rare steaks, in beef the major health hazard is ecoli, which is only found on the suface of meat, so even just lightly searing a steak is enought to make absolutly safe to eat. The people that really freak me out are the people who eat hamburgers anything belo med-well, cause thats just unsafe, i personally dont eat hamburger, its nasty, but i thought i would just mention that.

i always send a steak back in a restaurant if it's over cooked. Why do they ask how you'd like it done, and then procede to ignore your request?

Well, we could step back one further and ask why is it seen as cool to eat steak at all ? Doesn't make sense to me.

surely, its just another decaying animal like rabbit, dog, cat, goat, sheep, pig ?

Why perceive them as different.

I like my steak medium well, a little pink, and juicy, not oozing lots of blood. That way it has lots of flavour, and isn't tough, but also isn't off putting.
Maybe it's like other "sophisticated food" snails, (no-one eats slugs, and they're virtually the same, just without the house) birds nest soup, (made from swallow spit, yummy)caviar (fish eggs???) etc, if it's gross to most people, then there are the few who like to eat it with a big cheesy grin saying, "you don't know what you're missing". I think that it gives some types a superior feeling to be brave, (or stupid) enough to eat what others find distasteful.

i join the "i dont understand either" club! it is disgusting to think about the drippings! also, could there be bacteria present in not-well-cooked meat????? what is so sophisticated about that? i have never tried it rare and i dont intend to.
