Seriously...any tricks for hard boiled eggs...?

I make them all the time but sometimes the shells stick to the whites and I cannot get them perfect for deviled eggs??? Is it the boiling or the temperature when you peel them?


Answers:
For devilled eggs you should stir the eggs when they're boiling with a wooden spoon. This will make the yolk centered.

Immediately when they are done cooking, pull them and get them in cold water. This should be done instantly. Then when they are cooled totally, they should peel easily

I boil them for 10 min. and the pour off the hot water, run cold on them and fill the pan with ice and cold water. Crack each egg and let sit in the ice water a few min. and then peel. If you get a little resistance just dip it back into the ice water.

Actually, the problem is a tad complicated. The fresher the egg, the more difficult it will be to peel when hard-boiled (no matter what you do in the cooking process). I'm guessing that this is because the membrane tends to pull away from the shell a bit as an egg gets older. It is difficult to know how old eggs are when you buy them, so I have always found this problem to be a bit hit-and-miss!

boil water approx 15 min with eggs in them.
if water is cold
16 min.
next put pot with eggs after time is up put under cold water.
shells will be easier to get off.
dispense shells into trash......the rest is easy.

place your "fresh" eggs in a pan of warm water so as to get them use to the temp change... turn the heat up on high just till boiling and then take the pan off the heat and let stand for 10-12 minuites. place the pan under running cold water and let stand till cooled. they should peel much easier...you must use fresh eggs... older eggs always seem to stick more.

Definitely start with fresh eggs....place them in the pan and cover them with plenty of cold water...sprinkle salt in the water. Once they come to boil, turn off the burner (but leave the pan on there) cover the pan and let them sit for 10 minutes. Once 10 min. are up, run them under cold water. Your eggs should peel easily!

Here's the deal. Add some vinegar -say 1/4 cup- to your water before boiling the eggs. After boiling, pour off the hot water and toss some ice cubes on the eggs (still in the pot) and then fill pot with COLD water. Wait for the eggs to chill.

Now take an egg, and give a firm rap on the countertop on one end, then the same on the other end.

Now roll the egg between your palms to crack the shell all over, and the shell should then pull away from the egg.

An alternate method is to leave the eggs in the cold water, affix a tight fitting lids and shake the pot vigorously; this chips off the shells, you just pull out the eggs and rinse 'em off!

my mother taught me this and i very seldom ever have problems with shelling eggs.
put your eggs into the pot.
cover with cold water.
put on stove and bring to a boil.
boil 5 minutes/remove from heat
dont drain water.
run cold water into the pan, untill the hot water is replaced with cold.
smack the bottom of the egg and tear off the shell a little being sure to tear the filmy tissue inside the shell.
drop it back in the water.and wait 10 min.
I then drain most of my water,and roll each egg in my hand gently ,then using my thumbnail to lift the shell from the bottom ,i slide my thumb across the egg under the shell .as i turn it.It helps if your fingers are wet ,so i dip the egg once in a while.
rinse it off and enjoy.

when I make hard boiled eggs I heavily salt the water, (med to heavy) then when they are done I let the eggs cool in that same salted water until their cool enough to handle. The peel should come off really easy. I have almost no problems, but of course there is always that 1 egg that acts crappy. You should try it and see. I've been doing it like this for yrs. I also add the eggs right at the beginning too instead of waiting for the water to boil. and stir w/ a wooden spoon to help distribute the salt. I've also had success after the eggs have been refrigerated but not as good. I think the shells just slide off easier while the egg is still kind of warm. I really don't know why, I just know I found a way that works for me so I'm sticking w/ it.

start with cold water and a capful of white winger. boil for 20 minutes...draining the water and quickly cool them off with cold tap water let them soak in the cold water for 5 minutes. Crack each egg and let sit in water for another 5 minutes, this will help to remove the shell...

First, take a pointed item like a needle and pierce the shell of the egg at the large end. That will stop the shells from cracking open when they boil.

Put eggs in pan and just cover with water, salt and vinegar will not penetrate the shell so don't bother to put that in.

Bring the water to the boil, and cook for 6 mins. Put the pot in the sink and run cold water over the eggs till they are cool.

Crack the shells all over, start to peel the shells off from around the middle of the egg, simple.

Do not over boil the eggs or you will end up with a dark ring around the yolks when they are cold. A common mistake.

Should you have a few hard boiled eggs that have not been pierced prior to cooking and not been shelled you can identify them from raw eggs by spinning them on the work surface. The cooked eggs will spin and the raw eggs will not.

My husband's "never-fail" trick: Start with tap water and cook for ten min then use a solid-handled knife to crack the shells and continue cooking for another ten min. Drain the hot water off the eggs and cool down quickly under cold water. I peel them immediately (roll the egg in the shell before peeling) and store them in a plastic container lined with paper towel or dry them well and store. They don't last long as we use them for egg salad, salad garnishment or just eating! We usually boil eggs 1-2 times a week.

this works 98% of the time: drain the water, add a bit of cool water to the pot and shake the crap out of the pot up and down for about 15 seconds. it breaks the shells all at once and alot of them come off in one piece. then run cool water over the eggs and peel. works, i promise.
