Easy Low-fat Chicken Cordon Bleu Chickien:

Ingredients
Four boneless, skinless, chicken-breasts
Eight slices thin deli ham
Four slices low fat Swiss cheese (or regular - this is still a low-fat dish)
Butter Buds
Shredded Wheat biscuits (large ones), crumbled

Pound chicken breasts with kitchen mallet to tenderize and flatten.
On each breast, place two pieces of the ham (spread out to cover breast), one slice Swiss Cheese (place in the middle). Roll each breast up and secure with toothpick. Dip each rolled breast into Butter Buds made with liquid, then roll in Shredded Wheat. Bake at 350 degrees for about 30 minutes, until browned.

Slice chicken breasts into cubes. Zest and squeeze the lemons. Take lemon zest and put it on the chicken to sit for a while. Slice onion and garlic and put in a sauce pan to brown up. Then add half of the lemon juice. It will sizzle for a while.. then add diced chicken. Cook for 3 minutes then grade the carrot on top and add the rest of the lemon juice, and cook until juice is gone. Season with salt and pepper accordingly. Take the glass of orange juice and drink it.

Fiesta Chicken

Slice skinless chicken fillets (frozen can be used)
Boil in water til done. Drain when done reserving 1 cup of chicken broth.
Return to pan add bell peppers, onion, sliced potato (optional), sliced green olives (optional)
2 tbsp fresh cilantro chopped
Add 1 pkg of Taco Seasoning
Add 1 small can of tomato sauce
Heat to simmer about 5-10 minutes stirring constantly.

Put 1 cup serving upon a plate with cut lettuce, tomatoe, and low-fat shredded cheese on top.

White Rice can also be served with it if you aren't avoiding carbs or you can serve it in a warmed flour tortilla and dress it like a taco.

Here is my favorite low fat chicken recipe:

Tarragon Chicken Salad with Cranberries and Pecans

1 ? lbs of diced cooked boneless chicken breast.
? cup of celery
2 tbsp diced red onion
? cup dried cranberries
? cup non-fat yogurt
1 ? tbsp wasabi or hot mustard (both impart a different, but excellent kick)
? cup reduced fat mayonnaise (non fat is fine too, but taste better with reduced fat)
? cup pecans finely chopped
2 tsp minced fresh tarragon
Fresh ground pepper and salt to taste. I use about a ? tsp pepper and a ? tsp of salt
? cup pecans finely chopped for garnish (optional)

Mix the chicken, celery, red onion, and cranberries together in a large bowl. Set aside and in a smaller bowl mix the rest of the ingredients to form a salad dressing. Then mix chicken mixture and salad dressing together. Chill to merge flavors at least two hours, but can be served immediately.

I serve this by filling whole wheat buns and sprinkling about a tbsp of chopped pecans in each sandwich for crunch. Leave the pecans out for real low fat recipes, but pecans are good fats and very healthy for you if you do not over do them. This is also great just served on lettuce and tomato for a salad.

This should easily make six regular bun sized sandwiches

I make this chicken ALL the time.. my kids even love it! If you have frozen chicken breasts, let them thaw. Rub with sage, thyme, garlic, salt & pepper on both sides and grill. I tend to just sprinkle the spices right on to the chicken then rub it in. It doesn't have to sit or anything, just throw it straight on the grill. We cut it up and put it on salad or just serve it with some gilled veggies and rice. Enjoy! I know we do!

(p.s. use the sage sparingly, it is pretty strong but wonderful!)

Grilled Raspberry Chicken

? 6 boneless, skinless chicken breasts
? 1/2 cup frozen raspberries, thawed
? 1 cup raspberry vinaigrette
? 1/4 cup raspberry vodka (optional)
? 1/4 cup finely chopped mint leaves (optional)
? Fresh mint sprigs, for garnish (optional)
? Fresh raspberries, for garnish (optional)

Rinse chicken breasts and pat dry with paper towels. Place chicken in a large zip-top bag. Add raspberries, vinaigrette, vodka (if using) and chopped mint. Squeeze air out and seal bag. Gently massage the bag to mash raspberries. Marinate in the refrigerator for 1 to 4 hours.

Preheat grill to medium-high heat. Place chicken breasts on the grill and cook for 4 to 6 minutes per side. Remove from grill and place on serving platter. Garnish with fresh mint sprigs and fresh raspberries if so desired.

CHINESE CHICKEN

1 chicken (about 1,5kg)
4 tablespoons tomato sauce
2 tablespoons soy sauce
1 tablespoon dry sherry
1 tablespoon white vinegar
1/4 teaspoon chili powder
1 clove garlic
2,5cm piece green ginger

Wash and dry chicken.
Combine all other ingredients and mix well.
Add chicken and coat with marinade
Allow to stand several hours or overnight in refrigerator.
Next day, place chicken in baking dish, pour over marinade
Cover dish with foil.
Bake in moderate oven for about 1 and half hours, remove foil and bake further 30 minutes, brushing frequently with marinade.
