I found this, you might be interested in it:

Mini ‘Toad-in-the-Hole’

Toad-in-the-Hole is a traditional British dish made by pouring Yorkshire pudding batter over pork sausages and baking it until the batter rises up crisp and crunchy around the sausage. These are bite sized, so you’re guaranteed some sausage and some Yorkie in each bite. Unlike traditional Toad in the Hole, they are remarkably low in fat. These are as good at midnight as they are at breakfast

Ingredients:
6 small or 3 large chicken sausages (about 170 g)
1/2 cup flour
1/2 cup milk
1 large egg
Salt & pepper to taste
Grainy mustard, for serving

Directions:
1. Preheat oven to 350 F
2. Cut the sausages into 1” pieces. Spray a mini muffin pan with nonstick spray (use two if you have them) and put a piece of sausage into each cup. Stand it upright if you can. Bake for about 10 minutes, until they’re beginning to brown. Turn the oven up to 450 F, leaving the sausages inside
3. In a medium bowl, whisk together the flour, milk, egg, salt & pepper until relatively smooth
4. Remove the sausages from the oven and quickly pour a scant tablespoon of batter around each sausage. Return the pan to the oven for 15 - 20 minutes, until puffed and golden

Serve them warm, with a dish of grainy mustard for people to dab on top if they like

You could probably cut the fat more by using semi-skim milk.

Good luck, hope I helped some!

Yes make toad in the hole..but leave out the toads

Well, the rest of it is flour eggs and milk for the batter, so I guess you could try skimmed milk and maybe substitute water or more milk for one of the eggs, not sure how it will turn out but you can always try - good luck!

Not to sure but that may possilbe, you could try using Cearphilly sausages (leek and Cheese,, v.nice) but even then they ain't to clever

I'm sorry but there is no tasty alternative to the batter mix that is low fat.
I suggest if you want it, do it properly and enjoy it as a treat!!

When making the batter use either skimmed milk or half skimmed milk and half water.
Don't add any extra fat.

You'll have to scrimp on each ingredient.
Spray pan lightly with canola oil.
Use low-fat turkey or chicken sausage.
Use skim or low-fat milk.
Try low-fat egg substitute.
But it won't taste the same.
