Does anyone have any good summer recipies?
I am looking for some good summer recipies if anyone has any for me. Could be for bbq food, sandwhiches, deserts, salads. anything. We decided to have a Big Backyard bbq instead of the pizza party for our going away party to nationals. I want to make some things that i havent made before and looking for some suggestions. thanks!

Gazpacho soup -mmmm delicicious
and is also prepared in advance.
This classic chilled tomato soup is chock full of garden-fresh vegetables, cholesterol free, and made with very little added oil.
4 C tomato juice*
1/2 medium onion, peeled and coarsely chopped
1 small green pepper, peeled, cored, seeded, and coarsely chopped
1 small cucumber, peeled, pared, seeded, and coarsely chopped
1/2 tsp Worcestershire sauce
1 clove garlic, minced
1 drop hot pepper sauce
1/8 tsp cayenne pepper
1/4 tsp black pepper
2 Tbsp olive oil
1 large tomato, finely diced
2 Tbsp minced chives or scallion tops
1 lemon, cut in 6 wedges
Put 2 cups of tomato juice and all other ingredients except diced tomato, chives, and lemon wedges in the blender.
Puree.
Slowly add the remaining 2 cups of tomato juice to pureed mixture. Add chopped tomato. Chill.
Serve icy cold in individual bowls garnished with chopped chives and lemon wedges.
Yield: 6 servings--Serving Size: 1 cup

BBQ eggplant and tomato salad
1. Put little slits on the eggplant skin
2. Oil the eggplant and put it in the bbq till soft (takes about 30 minutes for a medium sized eggplant)
3. Oil and BBQ the tomatoes for about 8 minutes
4. Skin the eggplant and mash it (using forks, so it is a little chunkie)
5. Mash the tomatoes with skin
6. Mix it with the eggplant
7. Add olive oil, red bell pepper (fresh), salt, pepper.
8. Decorate with basil and baby spinach
BBQ lambchops
1. Marinade in tomato pure, vinegar, salt, ginger and garlic paste and pepper for almost 2 hours
2. BBQ in medium-high heat till you think its done ( atleast 20 minutes, 10 minutes each side. I like it well done so I keep it for about 35 minutes, 15 one side and 20 other)
I had a cook-out last summer and 3 days before hand, our grill conked out on us. We didnt want to cancel, so we changed the menu!!
I made a bunch of sandwich salads (chicken salad, tuna salad, ham salad, etc) and set them out on ice next to a variety of breads and rolls, pade up two different pasta salads, a potato salad, a garden salad and a caesar salad. We also had a vegie platter and some fresh fruit salad. Everyone left full and happy and everything was light and healthy for the most part!
This is my favorite summer-time recipe, though:
3-4 chicken breasts cut up chicken into chunks
summer squash sliced
zuchini sliced
1 can stewed tomatos
bunch of broccoli, cut up to cook
2 cups of spinich (fresh, frozen, or canned..if canned, drained)
1/4 cup parm cheese
garlic
salt and pepper to taste
heat veg or olive oil (about 2 tbspn) in a skillet. add chicken at medium heat. once the chicken is cooked most of the way, add to a sauce pan
add tomatos, summer squash, brocc, spinich, and zuchinni. add 2 tblsp. garlic, salt and pepper. simmer, covered, over medium heat for 15 minutes or until the borccoli is tender. add parm cheese. simmer another 5 minutes and serve. tastes great as is, or served over rice, pasta, etc.
