Answers:
Mom made her version of Sheperd's Pie. I am not sure what all was in it. I do know that she used Veg-All, canned tomatoes and hamburger meat. She topped it with mashed potatoes dropped like drop biscuits.

LOL once my Mom made a pot of pinto beans one day and the next day, to make them stretch added raisins and dumplings. We all just looked at her like she had lost her mind. I hate raisins anyway, so needless to say, Don't try this at home ;O)

Red chicken and rice. Basically, stewed chicken in spaghetti sauce, sometimes with mushrooms and peppers added, sometimes with meatballs added, served over rice. We loved it.

My mom used to make us hamburger mixed with mushroom soup and then put on toast. Now when we are in a hurry, its a dish that my brothers and sister will whip up to feed the families.

Chicken with rice
1. Marinade chicken in garlic, ginger, yogurt and salt for about an hour
2. On a skillet/crock pot add cooking oil and add 1 or 2 chopped onions
3. Add the chicken
4. Add a little vinegar
5. Cook for about 20-25 minutes, if it gets too dry add a cup of boiling hot water
6. Cook the rice separately
7. Mix with the chicken
8. Put on the stove in low heat, add 2/3 sliced tomatoes, cilantro, 1 small shopped ginger and ground black pepper. Cover for 5 minutes.
9. ENJOY

I still crave it when I am sick or feeling down.

Spaghetti tossed with butter or olive oil, Parmesan cheese, diced bacon, & peas. Delicious! I make it for my children now, but I use farfalle (bow tie pasta) because it looks more festive. Sometimes I substitute fresh spinach instead as well for different taste.

Now I know what to make for dinner tonight!

CSR..Chicken Sauce and Rice...ooh, the memories :)

She'd saute onions and garlic and spices in vegetable oil, then toss in whole chicken pieces *skin, bones and all*, tomato sauce, a large can of whole tomatoes, tomato paste, mushrooms and sliced green peppers and slow cook it for like 3 hours and then make rice. She'd give each of us a bowl of rice, ladle out the sauce over it and add a chicken piece. I shudder to think what the caloric or cholesterol # on that was :)

My mom used to make this pepper steak dish, it was white rice, green bell peppers and a few pieces of onion, thin strips of beef steak, and a can of brown heinz beef gravy. She would cook the meat in a little oil first then add the gravy and let it cook for about an hour so the meat would get really tender then add the veggies, cook the rice separately and she always added a little butter the rice (I hated that b/c I was always so helath conscious, I was like mom why do u have to add butter)!! I'll make this for my kids (when I have them) and tell them their grandmom used to make it for me (they will never know her though, b/c she passed away last august)

My mom made up her own version of Shawirma and macaroni salad...

Shawirma:

Chicken, mushrooms, french fries, turmeric, salt and pepper, cinnamon, and a tiny bit of curry.
Nothing had an exact measurement... lol... she cubed the chicken and the mushrooms and kind of stir fried it. Added everything together.
And when we wanted to eat it we had to put it in a pita bread... I loved adding a bit of mayonnaise to mine but however you like it... with sliced pickles and tomatoes... YUM YUM YUM.
I now make my own version of it by adding bell peppers.

Homemade noodles fried with hamburger and onions.YUM!!!
