Here in the Delaware/Philadelphia region, we have Scrapple, Cheesesteaks and really awesome Italian food.

Rhodes Greece
Cheese Stuffed pumpkin flowers.
Pitakia (small pies) of mashed bean and corn.
Minced meat and rice rolled in Lettuce Leaves.
Gyros in self made pita.
Hot Feta spread for pita.
Mini shrimps in olive oil.
Calamari in wine.
We have ramps. They're kind of like a green onion but if you eat them your breath stinks for about three days. People love them in the southeast of West Virginia.

Seattle... For inexpensive and delicious local food, I would say Pho (vietnamese noodle soup). I believe the first Pho restaurant actually started in Seattle in the late 60's, but I don't remember where I read that...
Another "delicacy" is teriyaki restaurants. These are very common with one every few blocks, it seems like. Most places serve grilled meat (chicken, beef, pork, short ribs, shrimp) glazed with a teriyaki sauce, rice and salad or stir-fried vegetables.
Seafood, especially oysters are good, but can get pricey so I have a hard time calling it a delicacy when it gets too pricey.
Thinking of pricey... Of course there's Starbucks which was founded in Seattle.

There's a little bit of everything in Napa Valley. I can't pick one. But Pan-Asian is really hot right now.

Nebraska......There is nothing better than a Nebraska raised corn-fed medium rare 20 oz porterhouse steak with sauted grilled mushrooms and baked potato...OH and an ice cold beer! :)
next best is Buffalo Steak from Ted Turners restaurant in Omaha.
hmmm...we have pasties and fudge in the UP as well as planked whitefish, smoked whitefish...we have tons of cherry and apple pies, jams, and wines...in the Traverse City and Leelanau areas, Detroit is known for their greek Coney Islands, and we have some influence from Canada (Ceasar cocktails...clamato and vodka) and Ohio (buckeyes...a candy made with peanut butter and chocolate)...I know there are more but I am drawing a blank! OMG, perhaps most important...Bell's Beer from Kalamazoo!

chow chow - a tomato and pepper relish, similar to salsa, but used kind of like cranberry sauce

boiled peanuts - they end up kind of like salty pintos with shells, but so much better
fresh peaches off the tree - there is no comparison to a grocery store peach and a real peach
cornmeal fried catfish with hush puppies (corn bread fritters)

I am at the Jersey Shore and at the boardwalk you can get a lot of good foods like sausage with onions & peppers sandwich, funnel cakes, soft ice cream, great pizza, cheese fries, snow cones.

In Hamilton New Zealand mine is fresh crayfish, deep sea oysters and fresh scallops. Most fruit and vegetables are delivered daily so fresh salads are the norm
