Any recipes using fresh pineapple, please.?

I have a fresh pineapple that needs using up. Does anyone have any simple savoury recipes I could try.

I put them in a casserole with chicken, banana, onion and tomato puree. Yum

Grilled Pineapple and Chicken Salad Recipe Courtesy of Emeril Lagasse

2 (6-ounce) chicken breasts, boneless and skinless
1 tablespoon olive oil
Salt and pepper
1 whole pineapple
1/4 cup walnut oil
1 tablespoon chopped chervil
1/2 cup minced celery
1/2 cup (about 2 ounces) chopped roasted walnuts
1 teaspoon finely chopped parsley

Preheat the grill. Season the chicken with salt, pepper, and 1/2 tablespoon of olive oil. Place the chicken on the grill and cook for about 4 minutes on each side. Using a sharp knife, split the pineapple in half. Using a paring knife, make a slit around the sides of the pineapple, leaving about 1/4-inch trim and remove the fruit. Reserve the pineapple boat. Remove the core from the fruit of the pineapple and cut into 1/2-inch slices. Season the pineapple slices with salt, pepper and remaining olive oil. Place the pineapple slices on the grill and cook for 1 to 2 minutes on each side. Remove from the grill and cool. Reserve 2 slices of the pineapples and dice the rest of the fruit. Dice the cooled chicken. In a mixing bowl, add the two reserved slices of fruit. Using the back of a fork, mash the fruit against the side of the bowl. Add the walnut oil and whisk until emulsified. Stir in the chervil. Season the vinaigrette with salt and pepper. In a mixing bowl, toss the diced chicken, pineapple, red onions, celery, and walnuts with the dressing. Cover the salad and refrigerate for 1 hour. Remove both the pineapple boat and salad from the refrigerator. Spoon the salad into both pineapple boats. Garnish with chopped parsley.

You could also just cut it up - skewer it with chicken and onions and throw it on the grill with some teriyaki sauce. SO YUMMY

um... u can put in oven for a few mins to get heated and crisped off?

Pineapple is very good just cut up and eaten alone.

16 ounces crushed pineapple
1/2 teaspoon salt
1/2 cup sugar
3 tablespoons flour
3 eggs, beaten
2 cups fresh bread cubes
6 tablespoons melted butter

PREPARATION:
Combine the undrained pineapple with salt, sugar, and flour. Stir in the beaten eggs. Toss bread cubes with the melted butter; fold into the pineapple mixture. Pour into a 1 1/2-quart casserole dish and bake at 350° for 40 to 50 minutes.
Serves 6 to 8.


Crockpot soup recipe, made with dried fruit, pineapple, apples, and spices.

INGREDIENTS:
1 small pkg. (6 ounces) mixed dried fruit or 1 1/2 cups of your choice dried fruit
1/2 cup raisins
10 oz pineapple chunks
1 large Granny Smith apple, coarsely chopped
3 cups apple juice or orange juice
1 tablespoon lemon juice
Cinnamon stick, broken up
2 to 3 whole cloves
1/2 tsp. powdered ginger
1 cup water
PREPARATION:
Dump all ingredients into a crockpot the night before you plan to serve; mix well, and cook on low all night (7 to 9 hours). Add other frozen or canned fruits, if desired. Remove cloves and cinnamon stick pieces before serving.
Serves 4 to 6.

Slice it and GRILL it. You won't believe how sweet and juicy it will be. You only need to grill it for about 3-4 minutes on each side. Serve it plain, or with some pineapple sherbert.

Fresh Pineapple Fruit Salad:

15 min 15 min prep
4 servings

1 whole pineapple
1 papaya, peeled,seeded and cut in chunks
1/4 lb seedless grapes
1 apple, peeled cored and cut into chunks
1/4 cup pecans
1 banana, sliced
1/4 cup lime juice
1 lime, quarted,as garnish

Cut pineapple, lengthwise into quarters.
Cut away and discard core.
Remove pineapple flesh by carefully cutting between it and the outer skin of pineapple to use the shell for a salad bowl.
Cut pineapple into chunks and combine with remaining ingredients, except lime wedges, in a bowl.
Gently toss and chill if desired.
Serve fruit salad in a pineapple shell topped with lime garnish.

fry in a pan with some sugure till caramalized and sticky serve with whipped cream or ice cream
