Not really chuck them all in a pan….

Mix, but not overly so the eggs, just enough that they yolk is broken up, but not lemon yellow. I add basil, and black pepper to the eggs. I then melt some butter in an omelet pan, add the eggs, pulling up the edges as the cook and pulling the runny part to the pushed back edges. When the eggs are mostly cooked, I add cheddar cheese, grilled onions, cooked green peppers, grilled mushrooms, etc. Let the cheese melt, then fold in half, and slide onto a plate. Top with a tiny bit of extra cheese and I’m done.

I also make a day after Thanksgiving omelet that sounds weird, but is a huge hit. Inside the eggs I add more basil, turkey and cheddar cheese.

Goat cheese omelet. Yum.

The perfect light and fluffy omelet

3 large eggs
2 tablespoons heavy cream
1/8 teaspoon salt
Pinch ground white pepper
1 tablespoon unsalted butter, melted
3 tablespoons grated cheese, such as cheddar or Swiss (optional)

Ham, bell pepper, green onion, provolone cheese. Salt and pepper of course.

6 eggs, chopped peppers, roughly chopped large onion, chilli powder, roughly chopped mushrooms and garlic.

You can make omelette out of pretty much anything. My personal favorite is to whisk the eggs add some cream cheese (which makes the eggs really creamy but not too cheesy) then as they're cooking you can add your favorite shredded cheese and sprinkle with parmesan. This would be a basic cheesy omelette.

On top of that you can add all sorts of things...

Bacon
Sausage
Tomatoes
Peppers
Salsa
Spinach
Mushrooms
Capers
Veggies
This list could go on forever, lol.

I like red pepper, onion and cheese omelet

For a good basic omelet beat 2 or 3 eggs with a little salt and pepper and one tablespoon of ice water for each egg, melt a tablespoon of butter and beat it into the eggs.

Melt a knob of butter in your pan over a medium heat, add the egg mixture. Carefully slide a spatula under the edge of the omelet and allow the liquid egg to run underneath until all the eggs are cooked.

Add your chosen filling to the centre of the omelet, fold over both sides and then serve.

For a cheese omelet use grated hard cheese such as cheddar or swiss, crumbled goat cheese or blue cheese.
Bacon should be cooked crisp and chopped before adding.
For onions, peppers or chopped tomatoes, gently saute these separately until tender.

There is no such thing as a bad omelet as long as it is properly cooked!
