Most camping shops sell packs of wood chips

My dad smokes alot and I've never seen him use sawdust. Try Hickory chips. I think you need to soak them first, too.

Hardwoods. Apple, Mesquite, are very good. I found some at a store that sells BBQs and charcoal.

You can try my favorite pecan or a fruit wood wood work good and you can't forget the favorite salmon on alder.

Just never use chips or sawdust from pine trees. Use only hardwoods, like oak, hickory, mesquite, cherry, apple, pecan

It depends on what kind of fish you are smoking... I'm assuming Salmon will be a possible choice. I always use either Alder or Hickory when smoking salmon.

Alot of smoking salmon also depends on the Brine. Here's the Brine i use for Salmon

1/3 c. brown sugar
1/4 c. non-iodized salt
2 c. soy sauce
1 c. water
1/2 tsp. onion powder
1/2 tsp. pepper
1/2 tsp. Tabasco sauce
1 c. dry white wine

I then smoke the salmon for about 6-8 hours on low heat.

I get mine from Cabellas, simply because it's the best flavor i have found, but to start you dont have to get fancy. try a number of different products to find the flavor that's right for you

For ham/ chorizo/ sausages, only one choice, beech wood from a woodland. One wrist thick branch would be a reasonable start. Leave for one year (having peeled the bark) in a cool dry environment.

Chisel a length of seasoned wood to get some shards. Bung on the embers of a charcoal fire. And when they begin to burn, spray with water to smoke them.

PS Sorry only saw the fish bit later, God knows fvor fish. Try the beech. If nice let us all know.

you use wood chips of apple, hickory, oak. I think most hard woods work. I t depends on the flavour you are trying to obtain. As for buying them I Don't know where you live.

If you cant get any sawdust you can use loose tealeaves. I've seen them use this on Ready-Steady-Cook, and they say it gives a lovely taste!
