what are some good sidedishes I can serve to my family with meatloaf besides mashed potatoes?

Potato Stuffed Onions

1 large sweet onion
1 1/2 C. frozen shredded hash browns, thawed
4 tsp. beef bouillon granules
2 T. butter
pepper to taste
minced fresh parsley

Cut onions in half widthwise; remove ends and outside skin. Separate onions into layers; select 6 layers to fit 6 lightly greased muffin cups.

Finely dice remaining onion; place in a bowl. Add hash browns and bouillon

Spoon into onion cups; dot with butter.

Bake at 375o for 16-20 minutes or until tender.

Sprinkle with pepper and parsley.

Serves 6


Colorful Oven Vegetables

1/3 C. butter
1/2 tsp. dried thyme
1/4 to 1/2 tsp. salt
1/4 tsp. pepper
3 C. cauliflowerets
2 C. broccoli florets
6 medium carrots, julienned
3 small onions, quartered

Place butter in a shallow 3 qt. baking dish; place in a 400o oven for 5 minutes or until melted.

Stir in thyme, salt and pepper. Add the vegetables and toss to coat.

Cover and bake for 25-30 minutes or until vegetables are crisp-tender.

Serves 10-12

Dilly Cauliflower

1 head cauliflower, cut into flowerets
1 tsp. Dijon mustard
1 T. balsamic vinegar
1 T. lemon juice
1 green onion, chopped
2 T. fresh dill, minced
2 T. olive oil
salt and pepper to taste
garnish with 1/2 cup walnuts

Place cauliflower in a steamer or in a colander set inside a saucepan of boiling water. Cover steam cauliflower until tender.

In a mixing bowl, combine mustard, vinegar, lemon juice, onion, dill, olive oil, salt and pepper; whisk well.

Place cauliflower in a serving bowl and toss with dressing. Garnish with walnuts.

Roasted or boiled potatoes.
Or try green beans & potatoes cooked together.
Also you could try any kind of pasta, beans, asparagus, rice, salad, and bisquits.

Sweet peas

Maybe try some corn or cornbread, crescent rolls or biscuits with honey-butter. Try some cooked carrots or green beans with bacon.

Most people wouldn't like my suggestion but maybe you will. I loved baked potatoes and butternut squash. With the bake potatoes I would rub with olive oil and add some seasoning salt to the skin and then put in tin foil. With the squash I would add brown sugar and butter. Enjoy

I like scalloped potatoes or baked potatoes and green beans or broccoli. The potatoes can bake with the meatloaf. Try to think of things that can bake with the meat to conserve on the electric.

Let me tell you this meatloaf recipe that is DELICIOUS and it is all cooked together for easy cleanup, you can use a throw away aluminum pan (like the size of a lasgana tray) or whatever other cooking pan you have. For this recipe you use about a pound of meat, breadcrumbs, finely chopped onion (if you like it), whatever spices you like-I use garlic, salt & italian seasoning & oregano and you mix this all in a bowl with about half of a beaten egg (or more if you wish), a few squirts of ketchup, a few squirts of worcestire, and almost a full can of campbells tomato soup...then you save the rest of the tomato soup and combine it with another can of tomato soup and one can to two cans of water (you can vary the recipe depending on how much meat & potatoes you use..the original recipe calls for 2 full cans of tomato soup and 2 full cans of water but I usually use a little less). You then peel some potatoes, uslaly about 5-7 depending on how big they are and slice them pretty thin (like scalloped potatoes) and arrange them in the tray around the meatloaf, then pour the tomato soup mixture over the potatoes and over the meatloaf and stir the potatoes, make sure they are alll full of the tomato mixture, the will look like they are floating & it will seem like you used to much, but don't worry, this is how it is supposed to look, then I usually squirt a little more ketchup on top of the meatloaf, cook this in the oven on 350 degrees for about one hour 15 minutes to 1 1/2 hours. You will be AMAZED at how tender & juicy the meatloaf will be & the thinly sliced potatoes in sauce are an excellent addition, even the kids will like this one (although mine picks out the onions) and you can serve it with a can of corn. I got this recipe from a Campbells cookbook many years ago and I changed it a bit over the years but I remember the first time I made it, I thought I was using way to much soup & water but I followed the recipe and most of the juice gets sucked up while cooking but all that mositure helps the meatloaf stay juicy & not get dry, it really is delicious, hope you try it.

If you make yours with tomato topping,try making a tomato gravy and put it over rice.Then serve with broccoli,corn,sweet peas,carrots or mac and cheese.Really anything will go with meatloaf.I live tomato gravy a lot and it is good with rice...

when i bake meatloaf,i always cook carrots,potatoes & sliced onions with it-----like you would with a pot roast (in the same pan)
