Burrito is the spanish word for little donkey, so why is it that the food is called a burrito?

I read some where it was something to do with the resemblance appearance of the donkey's ear or the pack it carries.

Probably from the shape of the pack the burro was carrying.

Authentic burritos are probably made from donkey meat. In Mexico that would be an expensive cuisine.
