Can you freeze Rhubarb?!

Question:

Can you freeze Rhubarb?

Our plant is getting HUGE and I want to trim some off before it gets spoiled by the rain.

Answers:
Rhubarb can be frozen for future use by cutting the stalks into 1-inch lengths and packaged in an airtight bag or by stewing first and the freezing. Rhubarb does not need to be sweetened before it is frozen.

yep. at my house we "harvest" it and chop it up and what we dont use we put in freezer bags and freeze them till we need to use it again. It lasts a long time too.

Easiest thing in the world. Cut the stems you want, discard the leaves. Wash the stem, chop into chunks, pop into bags and toss in the freezer. Vacuum sealing is also good.

Yes, I slice it and freeze it in plastic 1-qt containers. I don't blanch it or add sugar. You can use it to make good pie, cobbler, or sauce for ice cream when thawed.

The answers are all correct. I would just like to add that I freeze them first on a cookie sheet, then put them in the bag. You can pull out as much or as little as your recipe calls for without having to thaw the entire bag.
