Extra-virgin olive oil comes from the first pressing of the olives, contains no more than 0.8% acidity, and is judged to have a superior taste. There can be no refined oil in extra-virgin olive oil.
Virgin olive oil has an acidity less than 2%, and judged to have a good taste. There can be no refined oil in virgin olive oil.
Olive oil is a blend of virgin oil and refined virgin oil, containing at most 1% acidity. It commonly lacks a strong flavor.

Extra Virgin is usually the first pressing of the olives. It is darker and has more flavor. EVOO should mainly be used for salad dressings and uncooked dishes. It has a very strong flavor and can be very expensive. Use regular olive oil to cook with it is very tasty and has a high smoke rate, meaning at higher temps will not smoke. Plus it is good for you.

ugh, pleaz dont promote rachaels rays retardedness. evoo is extra virgin olive oil. It has the most flavor and nutrients because it is made from the first press of the olives. regular comes from the 3rd or 4th press, while virgin comes from the 2nd.
