Answers: Rigatoni with Broccoli

1 bunch of broccoli
salt/pepper
1/4 cup of extra virgin olive oil
4 garlic cloves minced
1/2 tsp crushed red pepper
8 ounces rigatoni
fresh grated romano or parmigiano cheese
trim the broccoli and cut into bite size pieces. Bring water ot boil in a large pot and add the broccoli and salt to taste. Cook for 5 minutes , scoop out the broccoli with a small sieve. Reserve the cooking water. Pour the oil into a skillet large enough to hold all of the ingredients. Add the garlic and red pepper and cook over medium heat for 2 minutes, add the broccoli and salt and pepper. Cook for about 10 minutes, stirring often until soft. Meanwhile, bring the water back to a boil and add the pasta, sook until the pasta is tender, scoop out about 1 cup of the cooking water and set it aside. Drain the pasta and add to the skillet with the broccoli. Add the reserved cooking water and cook, stirring often for 5 minutes more. Sprinkle with the cheese and serve immediately..

3 Boneless chicken Breasts
2 Jars or good Marinaria Sauce (Or 1, depends on your taste)
2 Eggs
1 package of McKormich Chicken Parm spice
1 jar bread crumbs
6Pieces of provelone cheese

-I usually buy three chicken breast and cutt them in 1/2. Not from side to side, but from top to bottom. Get a frying pan and put oil in it. Heat it to medium high. Pre Heat your oven as well to 375*.
-Crack the two eggs and beat them in a bowl.
-In a seperate bowl Mix up about 3/4 cup of bread crumbs and the packet of McKormick Ckn Parm seasoning mix well together
-Dip each chick breast in beaten egg bowl, then into bread crumbs and seasoning
-put in frying pan
-Fry all breast for 5-7 minutes on each side
-Get a baking dish and spread the bottom with marnera sauce, Enough to saturate the bottom of the chicken.
-Bake in the oven for 15 mins
-Remove and put cheese on, then put back in stove for 5 minutes or untill cheese looks great!
-Take out and put remaining warm marianera sauce on top of chickens and serve!
(I usally heat up the rest of the marianera sauce in a little sauce pan after I line the baking dish)
