ROMANIAN STUFFED CABBAGE

Cabbage
Ground veal
Ground pork
Instant rice
Tomato juice
Tomato sauce
Sauerkraut
Garlic salt
Pepper

Parboil whole cabbage. Tear off leaves and cut out core. Combine ground veal and pork (may substitute ground beef for veal and pork, but it's not Romanian that way) and enough instant rice to hold it together. Sprinkle with garlic salt and pepper and mix well (this is sort of like making a meat loaf). Lay cabbage leaf out flat and top with a small handful of meat mixture. Roll cabbage around mixture to make what looks like a small pillow. Place roll in rectangular casserole dish with tucked side down (it won't open up upon baking this way). Continue with cabbage rolls until casserole has one layer.
Cover cabbage rolls with sauerkraut leaving a little juice. Pour a combination of tomato juice and sauce over the sauerkraut. Bake in a 350 degree oven for about an hour or until meat is cooked. This dish is FANTASTIC with mashed potatoes using the tomato mixture as gravy.

ROMANIAN MUSHROOM STEW

1 lb. bacon
3 - 4 med to lg. onions
1 lb. fresh mushrooms
Salt and pepper to taste

Fry cut up bacon until crisp. Remove from pan but leave drippings. Add onions to bacon drippings (sliced) and fry until soft. Drain grease from onions. Add drained bacon and onions to saucepan. Wash and cut fresh mushrooms. Scald with boiling water then squeeze well. Add mushrooms to bacon and onions (salt and pepper to taste). Cook 15 minutes in covered pan.

4 chicken wings
4 c. water
2 leeks
1 can chick peas
1 tsp. paprika
1 tsp. parsley flakes
1 tsp. salt
1/2 tsp. pepper
1 (10 oz.) pkg. frozen spinach
2 c. whole wheat flour
2 eggs
1 (8 oz.) carton sour cream

Rinse chicken wings and place in large pot with 4 cups water, bring to a boil and simmer for 30 minutes. Trim root ends from leeks and chop. Add to chicken soup and simmer 30 minutes. Add the spices, chick peas and spinach to the soup mixture and keep on low heat.
Dumplings: Put flour into a bowl and make a well in the middle; break in the eggs and add sour cream. Stir until a soft dough is formed. With your hands make 12 balls of dough (equal in size). Drop in the soup and cook until done. Serves 4 people. "Not good as leftover

MITTITEI (Grilled Romanian Hamburger)

2 lbs. lean ground beef
2 tsp. finely chopped garlic
1/2 tsp. ground allspice
1/4 tsp. ground cloves
1/4 tsp. crumbled dried thyme
1 1/2 tsp. salt
1/8 tsp. freshly ground black pepper
1/2 c. beef stock, fresh or canned
Vegetable oil

Combine all ingredients except oil in a deep bowl. Knead vigorously with both hands until ingredients are well blended. Then pour in the stock and beat with a wooden spoon until the mixture is smooth and fluffy. Taste for seasoning. Divide the mixture into 18 equal portions and roll each one into a cylinder about 3 1/2 inches long and 1 inch thick, moistening your hands with cold water as you proceed.

This is a really easy one. In Romania this is most commonly eaten with fish or grilled pork or chicken. It is GREAT with many things though (french fries, pizza etc.) This is a slightly more complicated version that is more common in Transylvania. In the south the ingredients are usually just garlic, salt, and water. A mortar and pestle are most traditional but you can also use a garlic press or very finely mince the garlic as well.

time to make 10 min 10 min prep

1 head garlic (peeled and separated into cloves)
1 teaspoon salt
2 tablespoons vegetable oil
1/2 cup sour cream (reduced fat is fine!)
black pepper

1. Put the cloves of garlic in a mortar with the salt and crush into they are a paste. (You can also crush them in a press or mince very finely and then add the salt later).
2. Put the garlic in a small bowl and add the oil. Beat with a fork until it is very well mixed and somewhat fluffy. This should take about 3 minutes.
3. Add the sour cream and plenty of black pepper. Mix well.
4. Serve with grilled meat or fish, french fries or baked potatoes, pizza --
