How do you make the Japanese onion/mushroom soup they give you at the restaurant? Not miso soup, but the broth

I am looking for a recipe for the broth they give you as an appetizer at Japanese retaurants. All the recipes I have found online have things like carrots and celery in them, but this stuff seems very basic, just broth with mushrooms and chives. Anyone know how to make it? Thanks!


Answers: I used to work at a japanese restaurant and the soup you are talking about is not actually authentic Japanese cuisine. However, it is good... You don't really need to buy anything special to make it. All it is is beef or chicken broth (sometimes both mixed together) garnished with thinly sliced shitake mushrooms and chopped green onions. You can get everything you need at any fairly large grocery store. Source(s):

6th year living in Japan I believe it is a soy based paste called Miso paste. I buy it at health food stores. They sell it in packages at most grocery stores. Even wal-mart with their pathetic Asian foods section has them. I think all you need to do is add water. Google it dear
