Easy German Potato Salad:
INGREDIENTS
8 potatoes
1 cucumber, thinly sliced
1/2 cup mayonnaise
salt and pepper to taste
DIRECTIONS
Place potatoes in a large saucepan or Dutch oven, and cover with lightly salted water. Bring to a boil over high heat, then reduce heat to medium, and simmer until potatoes are tender; drain and cool. Peel the potatoes and cut into 1/4 inch slices.
Mix together the potatoes, cucumbers, and mayonnaise; season with salt and pepper.

or

Southern Potato Salad:
INGREDIENTS
4 potatoes
4 eggs
1/2 stalk celery, chopped
1/4 cup sweet relish
1 clove garlic, minced
2 tablespoons prepared mustard
1/2 cup mayonnaise
salt and pepper to taste
DIRECTIONS
Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes; drain and chop.
Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water; peel and chop.
In a large bowl, combine the potatoes, eggs, celery, sweet relish, garlic, mustard, mayonnaise and salt and pepper. Gently mix together and serve warm.

You take white cake and cut in half long ways in middle fill with a mixture of white whipped frosting and whipped cream or cool whip. frost middle and then layer strawberries all over then place other half of cake and frost with same mixture. but now lay strawberries in lines to make a flag decoration. use blue berries for the star corner. Fresh Corn Salad

5 ears of corn, shucked
? C. diced red onion
3 Tbl. cider vinegar
3 Tbl. extra-virgin olive oil
? tsp. sea salt
? tsp. ground black pepper
? C. julienned fresh basil leaves

In a large pot of boiling water, cook corn for 3 minutes until
the starchiness is just gone. Drain and immerse corn in ice
water to stop the cooking and set the color. Cut kernels off the
cob. Toss with red onion, vinegar, olive oil, salt & pepper.
Just before serving, toss in basil. Well, Make it good and original. Start with some water melon, strawberries, blueberries and, lemonade. Bring some sandwiches with lunch meat and a strawberry and blueberry shortcake. Red-White-and-Blue!
Good Luck! You can't go wrong with hot dogs and hamburgers. Other ideas:

Paper plates, cups, napkins, forks, spoons, case of sodas, hot dog rolls, hamburger rolls. Maybe some foil wrap. I remember one year it was particularly hot and a friend became very ill from eating the potato salad containing mayonnaise. She spent the night in hospital. Since then I never bring any dish containing mayonnaise to picnics. A cooler is not quite cold enough.

Now I prepare a very tasty potato and green (or yellow) bean salad.

-small red potatoes, boil in salted water, leave peel on, cut in half
-green and/or yellow string beans, boiled, cut in two-inch long pieces
-two tablespoons chopped Italian parsley
-extra virgin olive oil, balsamic vinegar, (or, use purchased Italian dressing)
-fresh ground pepper

Place all ingredients in large bowl, add olive oil and balsamic vinegar and pepper to taste (or use purchased dressing) and toss to coat potatoes well with dressing. Refrigerate for 2 hours or overnight.

Shaved carrots, finely diced red pepper, thinly sliced Vidalia or red onion may also be added for colour and extra flavour.

Another easy picnic favourite is chick pea salad. Just purchase two cans of chick peas, add thinly sliced Vidalia or red onion and season as above. Refrigerate until well-chilled. Ask your host what is more needed. Do they want more side dishes? Desserts? Cookies are easy to make or you can buy them. Bring a watermelon. It is good and popular on a hot day. some eating utensils or whatever's the most needed. try some cupcakes decorated in red, white, or blue or some porterhouse steaks...anything!
