I have found a recipe for Authentic Mexican Red Rice - Arroz Rojo. Does anyone out there ever heard of this type of recipe?

1 1/2 cups uncooked white rice
1 red chile, fresh, seeded and finely diced
1 cup red chile sauce
2 cups chicken broth
4 cloves of garlic, peeled and crushed
1/2 small onion, peeled and finely diced.
1 tablespoon oil or lard

PREPARATION:
Saute garlic, onions and red chile in oil over medium heat for about 1 minute. Add in the rice and stir frequently until rice begins to brown. Add in the chicken stock and chile sauce and bring to a boil. Reduce heat and bring rice to slow simmer. Cook for 18-20 minutes without removing the lid.

im latin It is an authentic receipt for Mexican red rice among others to. Depends what u put into the rice a little of this and a little of that... it's a basic recipe for mexican rice. you can omitt or add things if you like. Such as you don't have to use red chile suace, I use tomato sauce, and when simmering mine I add cilantro it gives it a really good flavor. It's also great if you add some chopped up bell pepper when you saute the onions. Another variation for making it a meal instead of a side dish is to brown ground beef(I use ground chuck) with the onions. Yeah, that sounds about right. I never have followed an exact recipe for it I just go by sight and personal taste. It is very good. Actually the only thing I have a problem with is the chile sauce and the red chile. The way my mother, my grandmother, and now I, make it is not with chile sauce and the red chile, but with a tomato sauce composed of tomatoes, onion, garlic and cilantro. The most common misconception about Mexican food is that it must contain chiles. Not always true. However, it could be a regional recipe I am not aware of. My family comes from Mexico City and Michoacan. By the way, when you add the liquid portions, be sure to mix in some salt as well. It sounds like a great recipe! I will try it because I am a big fan of Mexican food.
