I live in Southern Arizona and so close to the border we know that as chorizo and it is pronounced cho-ree-so. It can be made of either pork or beef and mixed with mexican spices. I have had it for breakfast with scrambled eggs and tortillas. It's very good. Carne de vaca mexicana

it's a spicy soft sausage......sometimes i find it a little greasy and heavy and i tried the vegetarian version.........soyrizo. very good as far as vegetarian food goes. C-H-O-R-I-Z-O
In the International Phonetic Alphabet (IPA) it would be: [t?o'riθo] or [t?o?'?so] Carne de Res, is Mexican Beef, and the others are correct you are thinking of chorizo,and it can be made out of most meats, some people like some fat in it, you can adjust it to your taste its easy to make , I use one lb of pork and I pound of beef,2 tablespoons of red Mexican Chile, garlic to taste, Oregano, mix well together and then add 1/4 cup of white vinegar. Put it in a covered crock in the fridge for about an hour ,best over night. You do not need to go by any recipe after you do it once you can adjust it to your taste. I do not use salt but if you do ,salt to your taste.
It will keep about a week and a half cover in the fridge, Or freeze in usable portions. Chorizo. (chor-EE-soh)

It is sausage with tons of spice. Best with scrambled eggs. chorizo and eggs with beans and warm tortillas is phenomenal...i suggest you try it.
