What is the diference between?

Szechuan Beef and Hunan Beef

I like them both but I can't really tell a difference.


Answers: The difference lies in their methods of preparation. Though both use beef cut into goujons, the preparation of the beef itself specifically is quite dissimilar:

For Szechuan version, the beef is 'dry fried' which in this context means unmarinated and uncoated, and a seasoned sauce is added in the very last stages of cooking to finish the dish.

For the Hunan, though again cut into goujons, perhaps a little larger than the Szechuan, it is first marinated in a rice wine, soy, ginger, chile and garlic marinade, then dredged in a cornflour and water mixture, and then fried, while an entirely separate sauce, somewhat thickened, is then prepared to complete the dish.

Both dishes have a sauce at their roots, based on rice wine, soy and flavourings, but the cooking method of the goujons of beef themselves are quite different, as is therefore the texture of them in the final result.

Szechuan is a style of cooking originating from Sichuan Province, located in south China.. Szechuan cooking uses peppercorns and Hunan, chili peppers. I'm chinese so i should know this.

Hunan beef is prepared differently and it's less spicy than Szechuan. (Depending on your taste)

And Hunan Chili peppers are orginated from Hunan.

While Szechuan Peppers are from the Sichuan Province.
