How do you make Japanese spinach salad?!


Question:

How do you make Japanese spinach salad?

I looked up recipes, but they all included sake or white wine which I don't have/aren't able to get. So does anyone know a recipe that does not include those ingredients?

By the way, I think the actual name of the salad was Gomaee or something like that. Sorry if I have the spelling all wrong, but I think I'm somewhat close.

Horenso Ohitashi - Japanese-style Spinach Salad Recipe

INGREDIENTS:

* 1 bunch fresh spinach
* 2 tbsp soy sauce
* 2 tbsp dashi soup stock
* 4 tbsp katsuobushi (dried bonito flakes)

PREPARATION:
Wash spinach. Boil water in a large pan. Add a pinch of salt in the water. Put spinach in the boiling water from the stem side. Boil the spinach for a few minutes. Drain and cool the spinach in cold water.

Remove spinach from the water and sqeeze the liquid. Cut spinach into 1 1/2 inch lenghs. Serve spinach in a plate and pour mixture of soy sauce and dashi. Sprinkle katsuobushi on the top.

---------------- Hot Japanese Spinach Salad

1 lb fresh spinach, washed and
drained
1/2 lb fresh bean sprouts, washed
and drained
1 tb Sugar
2 ts Distilled white vinegar
1 tb soy sauce
2 ts Sesame seed; toasted

Place spinach and bean sprouts in 2 quart microwave-safe baking
dish.
Cover; microwave on High 2 minutes.
Toss vegetables; cover and microwave on High 3 minutes.
Meanwhile, combine sugar, vinegar, soy sauce and sesame seed,
stirring until sugar dissolves; pour over vegetables and toss to
combine.

1 lb. frozen or fresh baby spinach
1-2 tablespoons mirin (rice wine) or sake, or vegan white wine
1-2 tablespoon toasted sesame oil, or ground toasted sesame seeds
1-2 tablespoons tamari or other good brewed soy sauce, or teriyaki sauce
1 teaspoon sugar (omit if using teriyaki sauce)

Directions:

This couldnt be easier! Thaw the frozen spinach and drain well. Or, if you're using fresh spinach, just wilt, drain, and refrigerate until cool. Mix the sauce ingredients together, and add to the spinach. Thats it! Serve cool, or at room temperature.

The measurements of all the dressing ingredients are flexible. Use the smaller amount, and add more if you like, according to your taste. If you're using teriyaki sauce, omit the vegan sugar. (I like Kikkoman or San-j, but I would avoid using one with fruit juice.) Try this with broccoli, too!

Serves: 2-4

Preparation time: 5 minutes

-------------------Spinach Salad

1 bag baby spinach
1 medium onion, minced
3 tablespoons oil
2 tablespoons brown sugar



1. Saute' the minced onion in the oil until tender and slightly brown.
2. Remove from heat and add the brown sugar.
3. Mix together well.
4. Pour dressing over the baby spinach and toss to coat. It may look like there's not enough dressing (it's plenty) just keep tossing and tossing until spinach is completely coated.
