i need a nice recipe for rice and peas - please! i got a book with it in it but it didn't taste the way i remembered it.

Hello. I''l tell you how I cook rice and peas for dinner every sunday evening. I wont give you the measurements since you already have a recipe book. Here goes:

. Soak the kidney peas in water with a few cloves of garlic for at least an hour. If you don't soak the peas, it will take really long to cook. If you dont have time to soak them, boil them for a few minutes then pour a little cold water on them. Bring water to boil again until peas are cooked.

. Cook peas in water and coconut milk until they are soft. You may also cook them in a pressure cooker for 25- 30 minutes.

. Add white rice to the cooked peas. 1 cup of water to every cup of rice (use the liquid that you boiled the peas in). Season the pot with butter, escallion, 1 hot scotch bonnet pepper, salt, a pinch of sugar, thyme and pimentos.

. Bring water to a boil. Then put the flame on low. Let rice steam until cooked.
