Asian cooking help! Is Wheat starch the same as wheat flour? Is tapioca flour the same as Tapioca starch?

I am trying to make har-gau (Chinese Shrimp pot stickers), and I have wheat flour instead of starch. Also, is tapioca flour the same as tapioca starch. I was trying to make brazillian cheese bread, pao de qeuijo (spelling is wrong) and it calls for tapioca flour, but I have the starch. Thanks!


Answers:

Wheat starch is a small component of regular wheat flour. If removed the flour becomes high gluten, which is poor for baking, etc. I would recommend getting the wheat starch since it's a small part of wheat flour, but can really change the flour's consistency.
Tapioca flour and starch are interchangeable, though.
