A certain climate to make noodles?

When ever I atempt make home made noodles, the mix drys up and crumbles apart. I know I'm mixing in the right ingedients in the right amount, so I'm guessin the dry climate I live in is doing this to my mix. So if I make my kitchen more humid (bleh), would my noodles' mix not break apart?

if your noodles are falling apart - crumbling, then it sounds like you don't have enough liquid (your dough is too dry since it crumbles) and you need to knead the dough to develop the gluten which also hold the noodles together.

When dealing with flour, recipes get you close but sometimes you need to add more or less liquid since the flour itself can vary in moisture content.
