How do you make Chile Rienos?


Answers:

There are two styles of Chile rienos. One is battered and fried the other is done in a egg batter and grilled. The peppers are either an Anaheim pepper(the milder) or the pablano(slightly hotter). Make a slit to take the seeds out of the pepper. Make the slit large enough to stuff the pepper. It can be filled with your favorite cheese or a mixture of cheese ,meat and vegetables. I like a mix of cream cheese, Cheddar and sausage. Stuff the pepper and then decide if to fry or grill. The most accepted id the grilled. You mix egg whites beaten until the froth and start to peak . You them fold in flour to form a batter. this batter is put on the pepper and grilled. Fried you make a batter( or buy) like you would use on fried veggies. Dip pepper into the batter and fry until golden brown. If you like a more tender pepper, before taking the seeds out blister the skin of the pepper with open flame, or dip in hot oil, or place in broiler until the skin blisters. Place the peppers in a plastic bag(zip lock) an let stand for 10 min. . The skin should peel off in any of the three ways after they are put in the bag. The easy way is to by canned while green peppers in the Mexican section.
