Good recipe for filet medallions(steak)?

And just how do you cook it to perfection?


Answers:

Marinade:
1/2 cup extra virgin olive oil
1 tablespoon minced garlic
1 tablespoon fresh basil, chopped
1 tablespoon fresh parsley, chopped
1 teaspoon blackening seasoning
salt & pepper

-Clean and prepare filet.

-Mix all marinade ingredients together.

-Place in zip bag with tenderloin and let sit at room
temperature for 30 minutes.

-grill, broil, or pan-fry

-do not over cook.

-When the filet mignon is soft when you touch it and your finger leaves an imprint, it is rare.

-If it is still soft, but leaves no imprint, and is slightly resilient, then it is medium rare (best for this particular type of meat).

-If the meat feels hard or firm, it is too done.
