Loking for a recipe for Chineese Fried Rice.?

I have cooked Chineese Fried Rice and it tastes good, but never how they do it at the chinese restaurant...it tastes more like japaneese rice. I have used a "wok", peanut oil, ginger, and other stuff that people said you need to have the "real taste." I have tried so many recipes, all taste good, but never like the "real deal." Can you help me with that?


Answers:

you need short grain white rice. wash rice in seive several times until water runs clear before cooking.
cook as per directions, let cool and fluff the rice up with a fork, then put in refrigerator to cool completely.
Chop up celery stalks, white onion and fresh mushrooms into very small pieces.
in a small bowl, whisk 2 eggs well and set aside.
in a small bowl put 2 chopped fine green onions, (white and green part)
If you want meat added to rice or shrimp, have them cooked and cooled and chopped up fine in a separate bowl.
Now put the wok on med-high heat with 2 tablespoons peanut oil in it. let it heat up
First toss in the egg and chop and stir as it cooks , pull it up onto the sides of the wok, next toss in celery, onion and mushrooms, and let cook about 1 min , then toss in the meat cook 1 min(stir and turn constantly)
then toss in the rice, make sure it is not stuck together in clumps ,and blend whole mixture
add in 2 teaspoons soya sauce, 1 teaspoon oyster sauce, 1/4 tsp sugar, and dash of salt and pepper.
mix and toss well, keep tossing until the rice is warmed through about 2 min.
take off heat immediately,,
drizzle 5 drops of sesamee seed oil on top and add the green chopped onions,
toss once again and serve
