What are the ingredients of What to get the typical Indian curry paste?

Actually Curry pastes are more a Thai cooking medium, I am a former chef and do alot of Indian cooking in vegetarian dishes.

If you want to make a paste, I would recommend a combination of ginger, garlic, curry powder, chilis, oil and a bit of sugar, add drop or two of lime or lemon juice even a bit of vinegar, as it will turn if you don't, I learn that along time ago.

Just puree it all in a blender/food processor, I would not put cilantro leaves in it, you can use the roots like the Thai curry pastes, as cilantro goes off quickly.

Then when cooking a dish, saute the paste with the meat or veggies and then add your stock or potatos, I use alot of red lentils, they cook fast are high in protein and also are very inexpensive.

I make more veggie ones, with potatos, chickpeas, the lentils, zucchini and other veg, and I do it in the microwave it works quite well there, spiciness is up to you, so if you use fresh chilis or add the dried chili flakes. You can always add more in the cooking.
