Please explain this main course meal...?

Can someone tell me (simply) what exactly this is...

Pan-fried beef tenderloin, Jerusalem artichoke mousseline and oxtail and foie gras cannelloni.


Answers:

The tenderloin is the same meat as filet mignon steak. They are probably just using a smaller sized medallion and pan frying them instead of grilling.

Jerusalem artichokes are also called " sunchokes" because the flowers look like sunflowers and the part you eat is the tuberous starchy root which has a flavour similar to artichoke hearts.
Mousseline is a hollandaise sauce with whipped cream, but can the name can also be used for anything with a fluffy mousse texture.

So really it is just some fluffy accompniment made with sunchokes.

The cannelloni is a tubular pasta which has probably been stuffed with a pate-like mixture made of oxtail and goose liver mixture.

So, are you going to try it? Sounds a bit odd, but ya never know!
