I just started experimenting with Pancit (sp?) noodles?

they are really good but I can't find the nutritional information online - does anyone use them for vegetarian dishes?

They taste really yummy,

VEGETARIAN PANCIT CANTON:

Serves: 4

Ingredients:

6 ounces rice sticks (thin pancit noodles)
4 tablespoons oil
1 inch ginger, chopped fine
1 medium onion, chopped
3 cloves garlic, minced
3 cups shredded bok choy (Chinese chard or cabbage)
2 cups bell peppers (red, yellow, green), sliced
1 cup shitake mushrooms, sliced
1 cup shredded carrots
1/2 teaspoon crushed red pepper
2 tablespoons oyster sauce
salt to taste
1 green onion, minced for garnish

Preparation:

Cook noodles according to directions on package. Heat oil. Add onions, garlic, and ginger. Saute about 2 minutes until onions are brown, stirring occasionally. Add bell peppers, carrots and mushrooms. Add bok choy, oyster sauce, pepper and 1/4 cup water. Cook 2 minutes. Place warm noodles on a platter and pour onion bok choy mixture over noodles. Garnish with minced green onions.

Nutritional Info:

Per serving: 220 calories (100 from fat), 10g total fat, 1g saturated fat, 6g protein, 23g total carbohydrate (4g dietary fiber, 1g sugar), 1mg cholesterol, 210mg sodium
