What kind of cheese do authentic Mexican restaurants use to make cheese dip?!

What kind of cheese do authentic Mexican restaurants use to make cheese dip?

There are a few "authentic" Mexican restaurants in my area that all seem to use the same cheese. It is white and not spicy. They make cheese dip that is sooooo good and it seems to be the same as the non-melted cheese that they put on the tacos and other menu items. My favorite Mexican restaurants that use it are called El Campesino and El Rincon.
Can anyone tell me what kind of cheese they use or where I could buy some? (I live near Canton Ohio if that matters)


Answers:

To make authentic Mexican "queso fundido" the cheeses you can use are queso Chihuahua, queso quesadilla, or asadero. I've always been able to find at least one of those in the ethnic dairy section of my supermarket. Hope you can find them in yours!
