I am looking for a Chinese chicken fried rice recipe like the ones you get from your local take away?

my local take away makes one with a type of gravy through it, but some ive had a very dry so id like some insider information on how to make my own, thanks

This is what we used to cook in our Chinese take away, a dry style recipe for 2 (quantities approximate)

1 cooked chicken breast cut into strips
600g boiled rice
100g peas
1 or 2 eggs
3 tbsp vegetable oil
light soya sauce
pinch salt

1. Heat wok until smoking hot (this is very important, otherwise the rice will stick).
2. Add oil and swirl around the wok.
3. Add egg. Mix and cook for about 10 secs.
4. Add the boiled rice and mix into egg. Cook for 2 minutes (longer if the rice is cold) stirring frequently.
5. Add the cooked chicken strips and peas. Cook for about 5 minutes, stir and turn mix over.
6. Add the soya sauce and salt to taste. Cook for another minute. Ensure food is piping hot and serve.

Of course you can add other ingredients such as sliced mushroom, red peppers, spring onions...whatever takes your fancy...just add this to the egg stage
