APPLE BUTTER YAM PIE

1 (9 inch) unbaked pastry shell
1 c. hot mashed yams or sweet potatoes (about 3/4 lb. raw)
1/2 c. butter, softened
1/2 c. firmly packed light brown sugar
2 tbsp. flour
1 (15 oz.) jar apple butter
1/2 c. milk
1 1/2 tsp. grated orange rind
1/4 tsp. salt
3 eggs
Whipped cream and nuts (optional)

Preheat oven to 400 degrees. In large mixer bowl, beat yams, butter, sugar, and flour until well blended. Add apple butter, milk, rind, salt, and eggs; beat well. Turn into pastry shell. Bake 10 minutes. Reduce oven temperature to 350 degrees. Bake 50 minutes longer or until knife inserted near edge comes out clean. Cool. Serve warm or chilled. Garnish with whipped cream and nuts, if desired. Refrigerate leftovers.

APPLE YAM PUFFS

2 c. biscuit mix
1 tsp. cinnamon
1/2 c. mashed yams
1 beaten egg
1/4 c. sugar
1/2 c. applesauce
1/4 c. milk
2 tbsp. oil

TOPPING:

1/2 c. sugar
1/2 tsp. cinnamon
1/4 c. melted butter

Combine biscuit mix, sugar and cinnamon. Add applesauce, yams, milk, egg and oil. Beat until well blended. Fill greased muffin pan 2/3 full. Bake in preheated 400 degree oven for 15-20 minutes. Cool on rack until warm. Roll entire muffin in melted butter, then in sugar mixture. Cool on rack or serve warm. Serves 12.

BUTTERY PINEAPPLE YAM BREAD

1 (4 oz.) pkg. pecans
1 1/2 c. brown sugar, packed
1 c. butter, softened
1 (8 1/4 oz.) can Dole crushed pineapple in syrup
1 c. cooked, mashed yams (fresh or canned)
3 eggs
3 c. flour
2 tsp. baking soda
2 tsp. ground cinnamon
1/2 tsp. mace
1 1/2 c. raisins

Pulverize pecans in blender. Cream butter and sugar until light and fluffy. Beat in undrained pineapple, yams, and eggs until mixed. Combine pulverized pecans and flour, baking soda, cinnamon, and mace; beat into pineapple mixture until blended. Stir in raisins. Turn into 2 (8 1/2 x 4 1/2 inch) loaf pans. Bake in 350 degree oven for 50 to 60 minutes. Turn onto wire racks to cool completely.
