SAWIAN (INDIAN-STYLE VERMICELLI)

8 oz. Indian vermicelli
1 c. sugar
1/2 gal. milk
2 (illaichi) cardmom seeds
2 oz. pistachios & almonds, slivered
2 oz. butter

Fry the vermicelli in butter until golden brown. Add milk and sugar, stirring constantly. Give it a boil and lower the flame. Let it rest on the stove for another half hour. After transferring to a dish, sprinkle with nuts.

ALMOND LADDOUS (EAST INDIAN)

1 c. finely chopped almonds
1 1/2 c. flour
1/2 c. powdered sugar
1/2 c. candied cherries or dates

In a dish mix all the ingredients (except the cherries and dates). Add a little water until you have a stiff dough. Shape the dough into small balls the size of nuts with your hands. Bake them in a hot oven, 400 degrees, for 5 to 10 minutes. Make a small hole in the middle of the cookie with your little finger. Put in the cherry or date. Makes 20 cookies

ALU KAFTAC (POTATO
BALLS)

4 med. potatoes
1 tsp. salt
1/2 tsp. curry, or to taste
1/2 tsp. onion powder
1/8 tsp. pepper
1 egg
1 tbsp. milk
Fine dry bread crumbs

Cook potatoes in unsalted water to cover until soft. Drain and peel. Add seasonings. Mash until smooth. Shape into 2 inch balls. Beat egg with milk. Dip potato balls into bread crumbs, then beaten egg, and into bread crumbs again. Fry in hot shallow fat until golden

EAST INDIAN BEEF CURRY

2 lbs. lean beef, cubed
1/4 c. flour
3 tbsp. oil
1 chopped raw onion
2 tsp. salt
1/4 tsp. dry mustard
4 tbsp. curry powder
1 tsp. sugar
1 c. water
2 tbsp. lemon juice, preferably fresh
2 tbsp. grated or flaked coconut
1 tart apple, peeled and chopped
1 tomato, peeled and chopped
3 tbsp. seedless raisins
Dash of nutmeg

Dredge meat in flour and brown on all sides in hot oil. Add onions to skillet, saute a few minutes but do not brown. Add remaining ingredients and mix well. For a mild curry, decrease amount of curry powder used. For a hot curry, increase the amount. Cover.
Simmer for 45 minutes or until the meat is tender. Serve with rice and an assortment of condiments. Serves
