INGREDIENTS:
2 cups cold roasted lamb, diced

3 cups mixed vegetables, defrosted (peas, carrots, corn)
1 tsp. salt
1 tsp. black pepper
1 cup cooked long grain rice, cooled
3 cups yogurt
1 tbsp. dried mint
lettuce leaves to serve

METHOD:
Combine lamb, spinach, peas, carrots, corn, salt, black pepper, rice, yogurt and mint. Arrange lettuce leaves on a platter.

Spoon lamb mixture on top. Serve chilled as a great main course.
