What is cold kitchen?!

What is cold kitchen?

(Sorry about bad english.)
I have a lot interest in food industy and I like cooking. I'm thinking about make a living for it. And I heard about Cold kitchen somewhere. What is it?

Contrary to the comments of David L and butter baby, I was a chef for 20+ years and worked in 3 countrys, most of the Canadian provinces and did very well in my career, and I was a garde mange in several kitchens, it is a great job, you get to work in an air conditioned workplace, the work is not hard but is rewarding and I made more than the other chefs as the garde mange is a specialized position and next to the sous chefs in command.

You will make salad dressings, cold sauces and soups, cold appetizers like the pates, terrines, galantines, grav lax and other specialized items, the salads, cold dishes for Sunday brunches and buffets, while it is not as fast paced as the hot kitchen it does have its advantages.

So for some one to down grade and make it out to be bad place in the kitchen, obviously they had not potential and could not hack the pace or responsiblities, I enjoyed it immensely and would do it again in a heartbeat.
