Interestingly enough, Indian cooking actually involves a sort of holistic medical "science" system called the Ayurveda. (Translates to something like "Science of Life," I believe.) In other words, the Indian people have historically spent a great deal of time thinking about and analyzing various spices, carefully considering their individual and combined effects on smell, taste and even color... And even their likelihood of helping with various ailments.

Another interesting aspect of Indian food is that Indian food has had a lot of opportunities for mixing with and being influenced by the cuisines of other cultures. This has resulted in things like vindaloo -- one of the most popular types of Indian curries today, originally influenced by a dish imported by Portuguese colonials... But it has also resulted in distinct variances between, for example, South Indian and North Indian food... With North Indian food being more influenced by Chinese and Kashmiri cooking (those countries being immediately to the northeast of India.)
